OATMEAL SCOTCHIES COOKIES

Don't even think that you can eat only ONE! Boy, are these cookies fabulous! They are so moist and chewy. If you prefer a crisper cookie, just bake for a couple of minutes longer. These are great cookies to send overseas to our troops.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a mixing bowl, beat the butter, brown sugar, white sugar, egg, and vanilla extract until well combined. Beat in flour, baking soda, salt, cinnamon, nutmeg, and rolled oats until thoroughly mixed. Stir in the butterscotch chips and coconut. Drop the dough by tablespoonfuls about 2 inches apart onto baking sheets.
  • Bake the cookies in the preheated oven just until the bottoms are light brown, 7 to 8 minutes. If you prefer crunchier cookies, bake 9 to 10 minutes.

Steps:

  • Beat butter and brown sugar together until light and fluffy.
  • Mix in flour.
  • Wrap dough and chill for about 1 hour, or until firm enough to roll out.
  • Preheat oven to 325°.
  • Roll dough out on lightly floured board.
  • Cut out cookies.
  • Place on ungreased baking sheets.
  • Bake for about 20 minutes, or until lightly browned at edges.

Steps:

  • Preheat oven to 325°. In a large bowl, combine flour and sugar. Cut in butter until mixture resembles fine crumbs. Knead dough until smooth, about 6-10 times. Pat dough into an ungreased 15x10x1-in. baking pan. Pierce with a fork. , Bake until lightly browned, 25-30 minutes. Cut into squares while warm. Cool on a wire rack.

Traditional Scottish Pure Butter Shortbread Cookies - Biscuits image

Steps:

  • Preheat the oven to 325F degrees.
  • Blend the confectioner's sugar into the butter, and then gradually add the flour, 1 cup at a time. Dough will be very thick. At this point, you may add crushed lavender flowers or rosemary, if you wish.
  • Place dough on floured surface, pat down, and roll out into a square or circle 1/4 to 1/2 inch thick. Cut into 2 1/2 inch squares or Petticoat Tail wedges, and carefully place on an ungreased baking sheet.
  • Prick the top of each square or wedge with a fork.
  • Bake at 325F degrees for 25 to 30 minutes; cookies should be pale on top, but golden brown on the bottom.
  • Remove from oven, sprinkle with sugar if you wish, and cool on wire racks.
  • Store in an airtight container.

1 cup confectioners' sugar
1 lb salted butter, softened
4 1/2 cups all-purpose flour
caster sugar, for sprinkling (optional)
1/4 teaspoon crushed edible lavender flowers (fresh or dried) (optional)
