BARBECUED CHICKEN AND RIBS

Steps:
- Heat ovens to 325 degrees and 350 degrees. Coat the bottoms of two large roasting pans with enough sauce to cover. Add chicken to one pan and ribs to the other. Coat chicken and ribs with remaining sauce.
- Bake ribs at 325 degrees until cooked through, about 1 hour. Bake chicken at 350 degrees until cooked through, 1 1/4 to 1 1/2 hours.
- Prepare a charcoal or gas grill. Place chicken and ribs on grill, discarding remaining sauce in roasting pans. Grill chicken and ribs, turning and basting frequently with more sauce until well browned and heated through, 10 to 15 minutes.
- In a small saucepan heat sauce to serve with chicken and sauce.
BARBECUED SPARERIBS
Steps:
- Stir together sugar, spices, and salt and rub all over ribs to coat well, knocking off excess.
- Put chips in foil and crimp tightly closed to form a packet. Poke holes all over packet.
- Stir together all sauce ingredients until sugar is dissolved.
- Open vents two-thirds in lid and bottom of grill. Light half a chimney of charcoal, then put on one side of bottom rack, mounding and banking against side. Charcoal will be ready for cooking when it turns grayish white (10 to 15 minutes). Temperature should be about 350°F inside covered grill. Add additional charcoal if necessary. (Temperature will gradually drop during cooking; the goal is to maintain a low, continuous heat, about 250°F.) Put wood-chip packet on coals, then arrange grill rack so that one hinged side is over the coals.
- Oil rack lightly. Arrange ribs on rack so that they do not extend over coals, then cover.
- Cook ribs, covered until tender, about 4 hours. Every 20 minutes, baste ribs with sauce, turn over and switch positions, and add about 8 pieces of charcoal to the mound.

Grill skin side down, uncovered, on a greased grill rack over medium heat for 20 minutes. , Meanwhile, in a small saucepan, make barbecue sauce by heating oil over medium heat. This was adapted from "Fix-it and Forget-it Recipes for Entertaining - Slow Cooker favorites for all Year Round". The original recipe called for eight chicken breasts but I only use four and just make it extra "saucy".

- Grease the bottom and sides of slow cooker.
- Place chicken in slow cooker.
- Combine all the remaining ingredients except fresh herbs. Pour over chicken.
- Cover. Cook on low for 6 hours. (If convenient, stir after 3 hours of cooking.).
- Sprinkle with fresh herbs just before serving.
- Serve with rice, couscous, or over toast as a SOS meal.
