BREAKFAST GRILLED CHEESE

Steps:
- Mix the cream cheese, cottage cheese and confectioners' sugar in a medium bowl. Spread 2 waffles with the jam, then top with the cream cheese mixture; cover with the remaining 2 waffles.
- Melt the butter in a large skillet over medium-high heat. Add the sandwiches and cook until golden and crisp, about 3 minutes per side, adding more butter to the pan if needed. (Adjust the heat if the waffles are browning too quickly.)
- Let the sandwiches rest 1 minute before serving. Sprinkle with confectioners' sugar and cinnamon.

Steps:
- Butter outsides of 2 of the pieces of cinnamon bread and set aside.
- In a small bowl, mix together the coconut milk and grand marnier. Brush BOTH SIDES of 1 slice of bread (The one with no butter) with this mixture. Let soak while preparing the cheeses.
- In a separate bowl, mix the chopped white chocolate with the mascarpone cheese and powdered sugar- set aside.
- In another bowl mix the Neufchatel, honey, chopped dried apricots, marmalade and pinch of cinnamon.
- Spread the first mixture (white chocolate/mascarpone)onto inside of 1 of the dry pieces of cinnamon bread and sandwich it together with the soaked piece.
- Take the remaining dry piece of bread and spread the second mixture (neufchatel/apricot mixture)onto the inside- sandwiching it to the other side of the soaked piece. each cheese mixture will be sandwiching either side of the soaked piece.
- Place sandwich into a non-stick skillet over medium heat. Let sit for 2 to 3 minutes or until cheese is starting to melt and bread is browning. flip and press firmly- cook an additional 3 min or until chocolate has melted and undersides of bread are browned. Flip one more time and press firm- let sit 30 sec. Remove from heat and let sit 2 minutes, slice diagonally and garnish with a light dusting of powdered sugar.

BREAKFAST GRILLED CHEESE MELT

- Preheat a griddle or skillet to medium low heat.
- Take two slices of bread and spread 1/2 Tablespoon of the Chipotle Aioli Mayo on each piece.
- Place two pieces (or one, depending on how big your sour dough bread slices are) of provolone cheese, and pepper jack cheese, and place two slices, on each piece of sauced bread.
- Place a scoop of scrambled eggs and two slices of bacon on one of the slices. Top with green bell pepper and salt and pepper.
- Place your other slice of bread with cheese on sauce, on top, completing the sandwich.
- Spray your griddle or skillet with a butter or oil based spray, and place your sandwich on top.
- Grill each side for about 2-3 minutes, or until golden brown and the cheese begins to melt.
- Flip and do the same on the other side.
- Remove from the heat, once both sides are cooked, cut into triangles, and dig in.

- Scrambled Eggs:
- Whisk eggs and cayenne in a small bowl; season generously with salt.
- Heat butter in a medium saucepan over medium. As soon as it begins to foam, add eggs and cook, whisking constantly, until they have set in small curds and are beginning to look dry, about 1 minute. Immediately remove from heat and whisk in cream cheese.
- Assembly:
- Divide cheese between 2 slices of bread and top with egg mixture. Close up sandwiches.
- Heat a dry large skillet over medium-low and brush very lightly with butter. Toast sandwiches until golden brown, about 3 minutes per side.
- Do Ahead
- Eggs can be scrambled 2 hours ahead. Store tightly covered at room temperature.

- In a large nonstick skillet, cook and crumble the sausage over medium high heat. Transfer the cooked sausage to a paper towel lined mixing bowl. Break the eggs into a bowl. Add the water to the eggs and whisk to combine. In a large skillet over medium high heat, melt the butter and swirl to coat. Pour the egg mixture into the middle of the pan (you want the butter to move to the edges of the eggs in the pan) and cook without stirring for a minute or two. Sprinkle with crazy salt.
- Once the eggs begin to set, gently stir or fold the eggs as needed until the liquid is almost completely gone. Remove from the heat while the eggs are still slightly wet. (They will continue to cook while in the pan.) Add the cooked sausage and stir gently to combine and break up the eggs. Transfer the eggs and sausage mixture to the bowl that was holding the sausage.
- Shred the cheeses and mix them together in a bowl. Wipe out the skillet with a paper towel if needed and return to the stove. Butter 1 side of each slice of bread.
- Warm the skillet over medium heat. Place the bread buttered side down in the hot skillet. Sprinkle the bread lightly with 1-2 tablespoons of the cheese mix. Scoop about 1/2 cup of the scrambled eggs and sausage onto the bread and use the spatula to break it up a bit to cover the bread. Sprinkle generously with about 1/4 cup of cheese and layer a few pieces of arugula or spinach over the top. Add 1-2 tablespoons more shredded cheese and top with the second slice of buttered bread, buttered side on top facing out.
