SEAFOOD AND TORTELLINI IN CREAM SAUCE
I was just looking for something to do with the seafood I had in my freezer, I found a bag of tortellini in there too and we were in business. Just kinda made this one up from stuff I had in the kitchen one day. We decided it was worth making again.

Steps:
- 1. Cook tortellini according to package directions, drain and set aside. Meanwhile, melt half of the butter in pan and cook shrimp and diced onion, just until onions are tender and shrimp is pink. Remove shrimp & onions to a warm plate, reserving pan drippings.
- 2. Add more butter to pan, melt and add flour whisking until well blended with butter. Gradually pour in milk, whisking constantly. Add parmesan cheese, salt & pepper. Stir over medium heat until thick and bubbly.
- 3. Combine all ingredients in a pan except the colby-jack cheese. Mix thoroughly.
- 4. Sprinkle with colby jack and heat just until the cheese is melted. Serve with crusty garlic bread.

- 1. A side suggestion: keep a few peaces of uncooked fish,salmon has a stronger flavor for later, if needed In a deep pan add a 1/3cup of water and add seafood to simmer for 10 minutes.The purposes of this method is to draw the flavor from the seafood into the water.Remove seafood from pan and set aside for later, be sure to not break up fish to much.
- 2. Now this part is essential to this recipe!the water should have a Strong flavor. If not add those few peaces of uncooked fish and simmer 5 minutes more,remove those peaces and set aside.
- 3. To flavored water add 1/4 cup heavy cream and enough Parmesan cheese to thicken the sauce.If you need more sauce add remaining heavy cream.The Parmesan cheese can be added as well,or when serving your dish.
- 4. Cook your multicolor tortellini to package directions drain and set aside for later.Now that you have made your sauce,gently add seafood and tortellini to mixture. Sprinkle top with Parmesan cheese and serve. I serve hot bread and salad with this dish. enjoy!

- Cook tortellini according to package directions. Meanwhile, in a large nonstick skillet, cook shrimp in 2 teaspoons oil until shrimp turn pink. Stir in the lemon zest, 1/8 teaspoon pepper and pepper flakes. Remove and keep warm., In the same skillet, cook shallots in remaining oil over low heat for 10-15 minutes or until golden brown, stirring occasionally. Add garlic; cook 1 minute longer., Add the tomatoes, clam juice, wine, vinegar, thyme and remaining pepper. Bring to a boil; cook until liquid is reduced by half, about 10 minutes. Remove from the heat; discard thyme sprigs. Stir in the cheese, cream, basil, chives and shrimp. , Drain tortellini; stir into shrimp mixture. Sprinkle with shredded cheese and parsley if desired.

- Cook tortellini according to box directions. While it cooks, be sure to assemble all the other ingredients to be at your fingertips for when the directions begin to move quickly.
- Melt butter in large pan over medium heat.
- Add cooked tortellini. Stir gently until coated with butter.
- Add cream and prosciutto ham, combining gently. Cook until mixture thickens slightly, about 5 to 8 minutes.
- Add peas, cheese, and generously pepper (to taste). Turn over several times, allowing cheese to melt before serving.
