Steps:

  • Preheat oven to 350. Heat olive oil in a large pan. Add spinach, onions, and garlic and cook until spinach is wilted and onions are clear; stirring about 2 min. Sprinkle with a little salt and pepper. Spray a large (10-in. x 2 in.) round quiche or pie dish with cooking spray. Sprinkle 1 1/2 cups of cheese evenly to cover the bottom of the dish. Spread spinach mixture evenly on top of cheese. Add imitation crab evenly on top of spinach mixture. Beat Egg Beaters, milk, nutmeg and salt with a wisk about 1 min. Pour egg mixture on top of quiche. Sprinkle with remaining cheese. Bake for 40 min. or until egg is set. Serve warm.

1 TB olive oil
2 cups fresh baby spinach leaves, chopped
1/2 sweet onion, chopped
1 clove garlic, minced
2 cups shredded cheese (swiss, colby jack, etc)
1 lb imitation crab, shredded
2 cups Egg Beaters or other egg white brand
2/3 c 1% milk
1/4 tsp ground nutmeg
1/4 tsp salt
Non stick cooking spray
salt and pepper

Steps:

  • Preheat oven to 350 degrees F. Place half the cheese in the unbaked pie shell. Layer with crabmeat, spinach, and shrimp. Top with remaining cheese.
  • Beat eggs in a large bowl, lightly. Beat in remaining ingredients; pour over seafood and cheese.
  • Bake about 15 minutes, then reduce oven temperature to 300. Bake another 30 minutes, or until a knife inserted in center comes out clean. Let stand 10 minutes before cutting into wedges and serving.

1 cup swiss cheese, shredded (about 4 oz)
9 inches pie crusts, unbaked
1/2 cup lump crabmeat (about 5 oz)
10 ounces spinach, chopped frozen, thawed and squeezed dry
1/2 cup small shrimp, peeled (about 4 oz)
4 eggs
1 cup heavy cream
1 cup half-and-half cream
1/2 teaspoon salt
1/8 teaspoon cayenne
