Steps:
- Preheat oven to 350 degrees F. Place half the cheese in the unbaked pie shell. Layer with crabmeat, spinach, and shrimp. Top with remaining cheese.
- Beat eggs in a large bowl, lightly. Beat in remaining ingredients; pour over seafood and cheese.
- Bake about 15 minutes, then reduce oven temperature to 300. Bake another 30 minutes, or until a knife inserted in center comes out clean. Let stand 10 minutes before cutting into wedges and serving.
SAN FRANCISCO SEAFOOD QUICHE
If you like seafood, this is the quiche for you! Serve it with a mixed fruit salad or a green salad and a glass of good white wine! Originally from an old cookbook of mine. I especially like the fact that it makes two quiches- one to eat and one to freeze for later!

- Combine crabmeat,shrimp,cheese,green onions, and celery.
- In another bowl, combine mayonnaise,flour,wine, and eggs.
- Mix all ingredients together well, and divide the mixture between the two pie shells.
- Bake pies in a 350°F preheated oven for 35-40 minutes or until a knife inserted into the middle comes out clean.
- Quiches may be frozen before baking; bake frozen quiche in 350°Foven for 50 minutes.
- Leftover quiche may be heated in a 300°F oven for 15 minutes.

- Heat the oven to 400 degrees.
- Put the crabmeat and onion the bottom of a greased 9 x 1 1/4 inch pie pan.
- Mix together the salt, cheese, Bisquick, milk and eggs.
- Blend well.
- Pour over crabmeat and onion (in the pie pan).
- Bake for 25 minutes or until a knife inserted in the center comes out clean.

- In a bowl, mix the cans of seafood.

- Lightly grease a 22 cm (9 inch) diameter loose-based flan tin. Place the 2 sheets of pastry slightly overlapping, on a work bench, and roll out until large enough to fit the prepared tin. Press the pastry into the base and side of the tin and trim off any excess with a sharp knife. Refrigerate for 20 minutes.
- Slice or pull off any vein, membrane or hard white muscle from the scallops, leaving any roe attached. Preheat the oven to moderately hot 190°C (375°F/Gas 5).
- Cover the pastry with baking paper, fill evenly with baking beads or uncooked rice and bake for 10 minutes. Remove the paper and rice and bake for another 10 minutes, or until lightly golden. Cool on a wire rack. If the pastry puffs up, press down lightly with a tea towel.
- Melt the butter in a frying pan and fry the prawns and scallops for 2–3 minutes, or until cooked. Allow to cool, then arrange all the seafood over the base of the pastry shell. Sprinkle with the Cheddar.
