ARCTIC CIRCLE CRAB CROSTINI

Arctic Circle Crab Crostini image

Steps:

  • In a small saucepan, combine shaved fennel, onion, sugar and marmalade and cook for 10 minutes over medium-low heat. Set aside to cool to room temperature
  • Preheat oven to 375 degrees F. Combine onion, lime zest and juice, mustard and mayonnaise in a bowl, and then fold crabmeat into the mixture so that it's just combined and the crab is not broken or mashed. Season with salt and pepper, as needed. Arrange bread on a baking sheet. Using a melon baller, or small scoop, spoon seafood mixture onto bread and bake briefly in oven until seafood balls are lightly browned.
  • Garnish crab with marmalade and parsley.

3 stalks fennel, shaved with a mandoline
1 large white onion, diced
1 tablespoon sugar
1/2 cup apricot marmalade
1 large red onion, diced fine
1 fresh lime, zest grated and juiced
1 teaspoon stone ground mustard
1 cup mayonnaise
1 pound cooked Dungeoness crabmeat, picked through to remove remnants of shells
Salt and freshly ground black pepper
1/2 loaf French bread, sliced on the diagonal into 16 (1/2-inch) slices and lightly toasted
16 small parsley sprigs, for garnish

Crostini with Smoked Whitefish image

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix the poppy seeds, sesame seeds, garlic powder, onion powder and salt in a small bowl.
  • Brush the baguette slices on both sides with olive oil and spread out on a rimmed baking sheet. Sprinkle with the seed mixture. Bake until lightly browned and crisp, 8 to 10 minutes. Let cool to room temperature.
  • Meanwhile, with a rubber spatula, mix the flaked whitefish, creme fraiche and dill in a small bowl.
  • Top each crostini with a spoonful of the whitefish salad and garnish with 2 caperberry halves.

Seared Tuna with Hummus on Crostini image

Steps:

  • In a food processor, combine chick peas, garlic, parsley, sesame seeds and red pepper flakes, and pulse until coarsely chopped and combined. Remove to a bowl, stir in extra-virgin olive oil, and add lemon juice.
  • Heat canola oil in a saute pan and season tuna with salt, pepper, and paprika. Sear both sides and remove to a utility platter to let rest.
  • While tuna is resting, arrange bread slices on baking sheet and toast in oven.
  • Slice tuna and assemble appetizers by spooning hummus on each toast round and then topping with a piece of tuna. Top tuna with another small amount of hummus, about 1/8 teaspoon, and a small sprig of parsley.

1 (16-ounce) can chick peas, drained

Creamy Shrimp Crostini image

Steps:

  • Preheat broiler. Lightly brush 1 side of each baguette slice with oil. Arrange on 2 baking sheets. Broil until lightly toasted, about 1 minute.
  • Using electric mixer, beat cream cheese, mayonnaise and mustard in large bowl to blend. Mix in shrimp, green onions, dill and lemon peel. Season with salt and pepper. (Can be made 1 day ahead. Store toasts in airtight container at room temperature. Cover shrimp mixture and chill.)
  • Spread 1 tablespoon shrimp mixture atop each toast. Arrange crostini on baking sheets; broil until shrimp mixture begins to brown, about 2 minutes. Top with parsley.

Add the Parmesan cheese, drained crab meat, grated garlic, parsley, and red pepper flakes. Chop the cooked shrimp into small pieces and add to the bowl. Mix well.
  • Cut a baguette into 3/4 inch slices. Generously top each slice with about 1-2 tablespoons of the seafood spread (the amount will depend on the width of your slices). Cook for 4-5 minutes at 425F, or until the baguette is toasted and the seafood spread has softened. Top with additional parsley, if desired. Serve warm with a delicious glass of Cavit wine!
