PITA CHIPS
These baked pita chips make a lovely accompaniment to any dip or spread.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Cut each pita bread into 8 triangles. Place triangles on lined cookie sheet.
- In a small bowl, combine the oil, pepper, salt, basil and chervil. Brush each triangle with oil mixture.
- Bake in the preheated oven for about 7 minutes, or until lightly browned and crispy. Watch carefully, as they tend to burn easily!

SEASONED PITA CRISPS

- Preheat the oven to 350°F. In a small bowl, whisk together the olive oil, lemon juice, and seasonings (except salt). Brush the pita rounds on both sides with the seasoned oil. Cut each round into 12 wedges. Lay the wedges on a baking sheet in a single layer. Sprinkle lightly with salt and bake for about 10 minutes, then turn wedges over and bake another 3-5 minutes. They should be darkened and crispy but not too brown. Cool completely and serve. Any leftovers will keep for several days in a Ziploc bag or airtight container.

- Preheat oven to 350 degrees F.
- Combine olive oil and all spices in a large bowl. Add pita wedges and toss to coat, Spread in 1 layer on a baking sheet and bake for about 15 minutes, tossing once, or until pita is brown and crisp. Cool completely before serving.

Steps:
- Preheat oven to 400°F.
- Mix the garlic granules, onion powder, oregano, paprika, salt, and pepper in a small container.
- One at a time, brush the pita breads with olive oil, cut into 8 wedges (same pattern as cutting a pie or a pizza). Kitchen shears makes this step easy.
- Arrange the pita wedges in a single layer on a baking sheet, and sprinkle with the seasoning mix.
- Bake in a 400F oven for 7 to10 minutes.
