HIDDEN SECRET BROWNIES

Hidden Secret Brownies image

Steps:

  • Preheat the oven to 350 degrees F. Spray an 8-inch square baking pan with nonstick baking spray. Line it with a piece of parchment overhanging the edges (this will help in removing the brownies from the pan) and spray again.
  • Melt the chocolate in a bowl in the microwave or over a double boiler. Set aside to cool slightly.
  • In the bowl of a stand mixer using the paddle attachment, cream the butter and sugar. Beat in the eggs. With the mixer on low speed, drizzle in the melted chocolate. Add the vanilla extract, beets and walnuts and mix. Whisk together the flour and cocoa powder in a small bowl. Add half of the flour to the batter and mix just until combined. Mix in the remaining flour; do not over mix.
  • Pour the batter into the prepared baking pan. Spread it to even out the surface. Bake until a toothpick inserted in the center comes out clean, 50 to 55 minutes. Let the brownies cool completely.
  • Using the paper, lift the brownies from the pan. Remove the paper, and then cut the brownies into 9 squares. Dust with confectioners' sugar before serving.

4 ounces unsweetened chocolate, broken into pieces
2 sticks (16 tablespoons) salted butter, softened
1 1/2 cups sugar
3 large eggs
1 tablespoon vanilla extract
1 cup finely chopped beets, from 8 ounces of cooked beets (see Cook's Note)
1/2 cup toasted walnuts, chopped
1 1/4 cups all-purpose flour
1/4 cup unsweetened cocoa powder
Confectioners' sugar, to serve

SECRET INGREDIENT BROWNIE

A moist brownie with a hint of mint. I took them to the office and they were gone in 2 hours, no joke!! I know what you're thinking... The secret ingredient is pudding. I love them frosted! You may also add 1/4 tsp. of mint extract to the "wet" ingredients if you prefer more than a hint of mint. If you don't care for mint, you may use the pudding flavor of your choice in place of the mint chocolate flavor.

Steps:

  • Mix flour and baking soda, set aside.
  • Combine butter or margarine, oil and sugars. Beat in eggs, vanilla, and pudding.
  • Add flour mixture and combine. Add chocolate chips.
  • Bake at 375°F for approximately 20 minutes or until set.
  • Cool completely. Cut into 24 squares. Frost with your favorite fudgey frosting if desired.

Steps:

  • In a bowl, combine butter, sugar and cocoa. Stir in eggs, milk and vanilla. Blend in flour, baking powder and salt. Stir in bananas and nuts. , Pour into a greased 9-in. square baking pan. Bake at 350° for 40-45 minutes or until brownies test done. Cool on a wire rack. Just before serving, dust with confectioners' sugar if desired.

Secret Ingredient Chocolate Brownies (Light) image

Steps:

  • Preheat oven to 350*F. Line an 8 inch square pan with enough foil to overlap the sides of the pan. Grease lightly and set aside.
  • Heat the margarine and chocolate morsels in a saucepan over medium heat until melted; remove from heat. Add sugar and beat until smooth. Stir in eggs, instant coffee and vanilla. Add the flour, sweet potatoe, cocoa powder, baking powder and salt; stir just until combined. Stir in the walnuts. (if using).
  • Spread the batter evenly into the pan. Bake for 25 minutes or until a toothpick comes out with only a few moist crumbs. Transfer to a cooling rack; let cool completely before slicing.
