ORANGE BLACK SESAME TUILLES

Orange Black Sesame Tuilles image

Steps:

  • Preheat oven to 350 degrees F.
  • Cream sugar and butter together in a mixer. Gradually add flour and continue to mix for 2 to 3 minutes until thoroughly combined. Add remaining ingredients and mix just until blended.
  • Apply an even coating of nonstick spray to a sheet pan to prevent sticking. Drop mixture by tablespoons onto the sheet tray. Dip your fingers into cold water and pat down gently into a very thin layer.
  • Bake until lightly brown around edges and crisp for approximately 5 to 8 minutes. Remove with a spatula, take caution, these will be very hot! If you want, you can curve
  • cookies by laying them over a bottle until they set up (it only takes a few seconds).
  • In a blender combine sliced bananas, sliced strawberries, yogurt and juices. Pour into martini glasses and top with whipped cream and Orange Sesame-Seed Tuilles for garnish.

1/2 pound confectioners sugar
1/4 pound butter
1 cup all purpose flour
1 cup chopped almonds
Zest of 1 orange and juice, reserved
Black sesame seeds
1 tablespoon Cointreau
2 bananas
1 pint strawberries
2 cups vanilla yogurt
1/2 cup orange juice
1/4 cup pineapple juice
Whipped cream for garnish
Martini glasses

Steps:

  • Place a 12-inch non-stick pan over medium-high heat. Sprinkle 1 tablespoon of the Parmesan on the bottom of the pan. When the cheese starts to bubble and turn golden brown remove melted cheese from pan. Place cheese disc on rolling pin and press down. Let cool 4 to 5 minutes.

Sesame Tuile, Vanilla Ice Cream garnished with Raspberries and Lychees image

Steps:

  • In an electric standing mixer beat together the egg whites, egg, confectioners' sugar and bread flour until blended into a smooth batter. Fold in the lemon zest. Refrigerate, covered, overnight. Preheat the oven to 350 degrees F. Butter and flour a sheet pan or use a non-stick cookie sheet. Using a small off set spatula, spread 1 teaspoon of the batter into 5-inch circles spaced 3 inches apart. The batter should be spread thin. Sprinkle the tops of the rounds with sesame seeds. Bake a few at a time until the edges begin to brown for about 5 minutes. Working quickly use a spatula to remove the tuiles from the sheet pan and then mold them over the top of a 1 cup bowl. When they have cooled remove the molded tuiles and allow them to cool completely. When ready to serve place individual tuiles on decorative dessert plates. Carefully scoop ice cream to fill tuile, then top with raspberries and lychees.

Honey Sesame Tuiles image

Steps:

  • Cream butter and sugar using a paddle. Add honey and mix. Add whites and mix. Add flour and mix. A proper tuile batter is smooth. On a fiberglass mat or parchment paper, spread tuile batter evenly and thinly into 5 to 6-inch rounds by using a wet finger, circling outward. Sprinkle with sesame seeds. Bake at 300 degrees until tuiles are brown. Check often. Tuiles can be shaped when they are still hot. Place them in muffin tins or ramekins to form a cup shape. Work quickly.

1/4 pound butter, softened at room temperature
1 cup powdered sugar
1/4 cup honey
1/2 cup egg whites
1 cup sifted all-purpose flour
1/8 cup white sesame seeds

  • In a food processor, finely grind the sesame seeds. In a medium bowl, whisk the ground sesame seeds with the sugar and flour. In a small bowl, whisk the butter with the sesame paste until smooth. Stir the orange and lemon juices into the flour mixture, then stir in the sesame butter until the batter is smooth. Cover and let stand at room temperature for 1 hour.
  • Preheat the oven to 350 degrees. Line 2 large cookie sheets with parchment paper. Scoop tablespoons of batter onto the prepared sheets, spacing them 2 inches apart. Using an offset spatula, lightly spread the batter into 3 inch rounds of even thickness. Sprinkle a pinch of black sesame seeds on each tuile.
  • Bake the tuiles for about 10 minutes, until evenly golden. Remove from the oven and let the tuiles stand until firm, about 3 minutes. Using a spatula, transfer the ruiles to a rack to cool completely.
