SESAME TUNA MARINADE
Steps:
- 1. Cut Tuna into serving size portions remove skin, rinse in cold water and pat dry.
- 2. In a gallon size zip lock type bag combine marinade ingredients and mix well. Add Tuna and squeeze out excess air. Zip it closed and message to coat evenly. Place in refrigerator overnight or at least a few hours before cooking.
- 3. Bring to room temperature before cooking. Grill, broil or pan-fry Tuna over medium high heat until done. Don't over cook! Tuna can be served rare or medium and will be done in less than 10 minutes on a hot grill. Any longer and the meat will dry out and lose flavor. It's not necessary to grill or broil both sides, the marinade will brown quickly because of the sugar. In fact, a light charring makes it taste even better.
- 4. Just before serving, sprinkle with toasted sesame seeds. Add rice pilaf, steamed asparagus and crisp salad greens with vinaigrette dressing for a perfect gourmet meal.
- 5. Note, this is a wonderful recipe that works equally well with Salmon, Swordfish, Halibut, or any firm flavorful fish.

This is a combination of two fabulous marinades. My kids absolutely love it and ask for me to make it all the time! And, just by using a gluten-free soy sauce, the entire recipe is gluten free! Serve with wasabi paste and rice.

- Whisk tamari, sesame oil, mirin, honey, vinegar, ginger, green onions, and garlic together in a bowl until marinade is evenly mixed. Place tuna steaks in the marinade and refrigerate for at least 1 hour.
- Spread sesame seeds onto a plate. Remove tuna from marinade and discard marinade. Press tuna into sesame seeds until evenly coated.
- Heat olive oil in a cast iron skillet over high heat until very hot; cook tuna in the hot oil until cooked to desired doneness, 30 seconds to 5 minutes per side.

GRILLED TUNA WITH GINGER-SESAME SAUCE

- Make the sauce. Stir-fry the scallions, ginger and garlic in the sesame oil for one to two minutes. Add the remaining ingredients and pour the sauce into a small bowl. Set aside.
- Meanwhile, preheat the grill. Sprinkle the tuna fish with olive oil on both sides and season with salt and liberal grindings of pepper. Grill the fish for two to three minutes on each side for rare, longer if you wish it more well-done. Serve with the sauce on the side.

SESAME TUNA WITH SOY MISO DRESSING
This recipe is served at a seafood restaurant in Royal Oak, Michigan. The sesame covered tuna is done medium rare inside (almost like sushi) and has a fantastic soy miso dressing drizzled over the top. One of the best seafood dishes I love!

- In a shallow bowl, mix together 1/2 cup of sesame seeds, seasoning salt, white pepper, onion powder, wasabi powder, kosher salt and flour; set aside. In a separate bowl, mix together the eggs and milk.
- Dip tuna steaks in the egg mixture, then dredge in the flour mixture until well coated on both sides. Press on as many extra sesame seeds as possible, so it is well coated. Heat the vegetable oil in a large heavy skillet over medium-high heat. Fry tuna steaks for 2 minutes per side, and immediately remove from heat. The inside of the fish should still be red.
- To make the soy miso dressing, mix together the miso soup mix and soy sauce. Heat in a small saucepan or microwave, and drizzle over steaks.

- To prepare the dipping sauce, finely chop cilantro. Using a microplane, grate the ginger and garlic into a small bowl. Add cilantro, soy sauce, water, brown sugar and sesame oil into the bowl and mix well.
- To sear the tuna, season tuna steaks with salt and pepper, and coat the steaks with sesame seeds on both sides, pressing them down to stick to the fish.
- Heat a medium stainless steel, or cast iron skillet, over medium high heat. Add oil to the heated skillet.
- When the oil is shimmering hot, add tuna steaks and sear for 1-1.5 minutes. Flip and sear for another 1-1.5 minutes. (Feel free to cook a little longer to your desired doneness.)
