LEBANESE ADAS BIS SILQ (LENTIL & SWISSCHARD SOUP)
Wonderful, satisfying soup. This is a whole meal in itself. Great for lunch or dinner. Do ahead and reheat. The aroma from the garlic and cilantro fills the house and makes you want to dig right in.

Steps:
- Wash the lentils and place in a large sauce pan with the 6 cups water.
- Bring lentils to a boil, skimming when necessary, cover and simmer gently for approximately 1 hour or until the lentils are soft (do not under-cook) .
- In a separate pan heat the olive oil, add onions and cook until transparent, stir in the garlic and cook for a minute more. Add shredded swiss chard and stir fry until the leaves are wilted.
- Pour onions into the pot with the lentils, add cilantro, season with salt and pepper, add lemon juice and simmer for a further 15-20 minutes. Serve in soup bowls garnished with a wedge of lemon. Serve with some type of flatbread.

- Place lentils and water in a saucepan and bring to boil. Cover and cook over medium heat for 25 minutes.
- In the meantime, in a frying pan, heat oil and sauté onions and garlic until they turn golden brown. Stir in remaining ingredients, except lemon juice, and sauté for another 5 minutes.
- Stir the frying pan contents into the lentils and bring to boil. Cover and cook over low heat for 20 minutes or until rice and lentils are well-cooked. Stir in lemon juice and serve hot.

TAMER HINDI (TAMARIND DRINK)
Tamer hindi is a refreshing sweet and sour beverage-made with tamarind, water, and sugar-that's popular during the month of Ramadan.

Yield Makes about 10½ cups

Steps:
- Separate the tamarind mass into chunks and place in a bowl. Cover with the boiling water and set aside for a few hours until the pulp dissolves in the water.
- Rub the tamarind pulp and seeds with your fingers, and add 3 cups (700 ml) cold water.
- Place the mixture in a fine mesh strainer set over a large bowl and press on the tamarind to extract all the juice.
- Transfer the pulp residue to a small bowl and add 2 cups (480 ml) cold water, rubbing the mixture with your fingers. Strain into the large bowl used above.
- Repeat the procedure a third time with 1 cup (240 ml) water.
- Add the sugar to the tamarind juice in the large bowl and stir to dissolve.
- Refrigerate and serve very cold with ice and water to dilute as desired (about ¼ cup or 60 ml water per 240 ml cup of juice).
SHORBAT ADAS(MIDDLE EASTERN LENTIL SOUP)
This healthy soup is enjoyed throughout the middle east, and although simple in preparation and ingredients, is a very flavorful soup. Adas is considered a main dish mainly because it is so filling, and is usually eaten with pita bread and lemon on the side. *I use Ziyad brand red lentils, they are very very small and cook up quickly(see posted picture), so if you cannot find them, and use a bigger red lentil you may need to adjust water and ingredients as well as cook time.* You may add veggies such as diced carrots, celery e.t.c, but this is how it is enjoyed traditionally in the Palestinian/Jordanian areas.

- Wash and drain lentils.
- In a large pot, combine all ingredients.
- Bring to a boil, then let simmer on medium/low for about 35 minutes.
- Make sure to stir occasionally to avoid the lentils burn or sticking to the pot.
- Serve in with lemon wedges, on side.
- Enjoy!

- Dissolve the paste in the hot water.
- Sauté onions, peppers, garlic, and ginger over medium heat in the oil for 10 minutes.
- Stir in remaining ingredients, except mint, and bring to a boil. Cover and cook over medium heat for 40 minutes or until lentils are well cooked.
- If you want it more soup like, add water as it cooks.
- Stir in mint and serve.
