Steps:
- Slice jam roll and place in trifle bowl.
- Make jello following directions on package and replace 1/2 cup of cold water with the 1/2 cup of sherry.
- Pour fruit cocktail over jam roll, then cover with jello.
- Put in fridge to set.
- Make up custard and pour on top of jello when it is set.
- Then top with whipped cream and sprinkle with sugar sprinkles, keep in fridge till ready to serve.

This jelly is a lovely accompaniment to crackers and cream cheese. You can use any kind of wine, red or white.

- Combine wine, lemon juice, and pectin in a large saucepot. Bring to a boil, stirring frequently. Add sugar, stirring until dissolved. Return to a rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam off top, if necessary.
- Ladle hot jelly into hot, sterilized jars, leaving 1/2 inch headspace. Tighten 2 piece lids. Process for 5 minutes in boiling water bath.

- Add cinnamon, lemon juice and rind to boiling water and let stand over low heat until ready to use.
- Soften gelatin in colde water for five minutes; add to hot mixture and stir well.
- Add sherry wine and sugar; strain through cheesecloth.
- Pour into a mold (or individual molds) and chill until firm.
