Steps:

  • Slice jam roll and place in trifle bowl.
  • Make jello following directions on package and replace 1/2 cup of cold water with the 1/2 cup of sherry.
  • Pour fruit cocktail over jam roll, then cover with jello.
  • Put in fridge to set.
  • Make up custard and pour on top of jello when it is set.
  • Then top with whipped cream and sprinkle with sugar sprinkles, keep in fridge till ready to serve.

Steps:

  • Combine wine, lemon juice, and pectin in a large saucepot. Bring to a boil, stirring frequently. Add sugar, stirring until dissolved. Return to a rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam off top, if necessary.
  • Ladle hot jelly into hot, sterilized jars, leaving 1/2 inch headspace. Tighten 2 piece lids. Process for 5 minutes in boiling water bath.

Steps:

  • Add cinnamon, lemon juice and rind to boiling water and let stand over low heat until ready to use.
  • Soften gelatin in colde water for five minutes; add to hot mixture and stir well.
  • Add sherry wine and sugar; strain through cheesecloth.
  • Pour into a mold (or individual molds) and chill until firm.
