Short Thyme Broccoli image

Steps:

  • Place the broccoli and 1 in. of water in a saucepan; bring to a boil. Reduce heat; cover and simmer for 5-8 minutes or until crisp-tender. Meanwhile, in a small bowl, combine the oil, lemon juice, salt and thyme. Drain broccoli; toss with oil mixture.

Dijon Thyme Broccoli With Pine Nuts image

Steps:

  • Arrange broccoli in a steamer, steam covered for 4 minutes or until crisp-tender. Place broccoli in a large bowl.
  • Combine shallots, olive oil, lemon juice, dijon mustard, and fresh thyme in a bowl, and stir with a whisk.
  • Add broccoli, and pinenuts to the oil mixture, and toss.

5 cups raw broccoli florets
1 tablespoon minced shallot
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1 tablespoon Dijon mustard
2 teaspoons chopped fresh thyme
2 tablespoons toasted pine nuts

BROCCOLI WITH ROSEMARY

This recipe is a little different , very simple, and one of my favorite side dishes. I've made it with olive oil instead of the butter, but it's really not the same. It's very good with a little garlic, but I've posted it as written. Preparation and cooking times are estimates. Enjoy!

Broccoli with Rosemary image

Steps:

  • Cut broccoli into florets, peel stems and slice crosswise into 1/2-inch pieces.
  • Bring a large pot of water to a boil.
  • Add broccoli and cook, uncovered, until tender, about 5 or 6 minutes.
  • Drain well in colander and transfer to serving bowl.
  • In a small saucepan, melt the butter until it starts to brown.
  • Immediately add rosemary and salt, stir well.
  • Pour hot butter mixture over broccoli, season with salt and pepper to taste, and stir well.
  • Garnish with fresh rosemary sprigs, if desired, and serve hot.

1 bunch broccoli
3 tablespoons butter
1 teaspoon finely chopped fresh rosemary
1 teaspoon salt, to taste
