SHRIMP AND EDAMAME WITH LIME

Don't rely on heavy sauces this summer -- a squeeze of fresh lime juice and some garlic bring bold flavors to this simple dish.

Shrimp and Edamame with Lime image

Steps:

  • Cook rice, according to package instructions. Meanwhile, in a large nonstick skillet, heat oil over medium-high. Add shrimp and garlic and cook, stirring occasionally, 4 minutes. Add edamame and scallion whites and cook until shrimp are opaque and garlic is golden, about 3 minutes. Add scallion greens and lime juice and cook 1 minute. Season to taste with salt and pepper; serve with rice and lime wedges, if desired.

1 cup long-grain white rice, such as jasmine or basmati
1 tablespoon extra-virgin olive oil
1 1/4 pounds medium shrimp, peeled and deveined
1 large garlic clove, minced
2 cups frozen shelled edamame, thawed (from a 10-ounce package)
5 scallions, halved lengthwise and cut into 1-inch pieces, white and green parts separated
1 tablespoon fresh lime juice, plus wedges for serving (optional)
Coarse salt and ground pepper

Shrimp and Crab Macaroni Salad image

Steps:

  • Cook macaroni according to package directions; drain and rinse with cold water. Cool completely., For dressing, in a small bowl, combine mayonnaise, mustard, sugar, Old Bay, garlic powder, salt and pepper. In a large bowl, combine crabmeat, shrimp, cucumber and macaroni. Add dressing; gently toss to coat. Refrigerate until serving.

2 cups uncooked elbow macaroni
1 cup mayonnaise

SHRIMP AND EDAMAME SALAD

Try this unusual and healthy salad for lunch or dinner. My husband and teenage daughters love it. The inspiration for this salad was Recipe #95208. I started there and used what I had in the fridge. The recipe morphed into this yummy combination. I garnished the salad with the cheese and pilaf and served it on a bed of iceberg. This was fantastic with Triscuit trianglular wafers.

Shrimp and Edamame Salad image

Steps:

  • Cook the edamame according to the package directions. Rinse it with cold water and drain it. Thaw the shrimp if it was frozen.
  • Whisk together the lemon juice, olive oil, salt, Tabasco, and pepper. Dress the edamame and shrimp with this mixture. Toss in the green onions, stirring gently until everything is coated.
  • Serve the salad on a bed of greens if desired. Garnish it with the cheese and the pilaf - again, if desired.
