SHRIMP DIABLO TACOS

These tacos are a great change from standard ground beef tacos my kids get at our local taco chain restaurant. And they have quite a kick too!

Shrimp Diablo Tacos image

Steps:

  • 1. Wrap tortillas in foil and place in 350 degrees oven to warm. Peel, devein & cut shrimp into bite size pieces then set aside.
  • 2. In large skillet add 2T canola or olive oil, onions & bell peppers saute until softened 2 minutes.
  • 3. Add minced garlic, chopped tomatoes with liquid, cumin, red pepper flake, garlic powder & 1/2 squeezed lime and let simmer for 10 minutes to reduce.
  • 4. Stir in shrimp, cabbage, cilantro & 1/2 finely chopped jalapeno and shut heat off. The shrimp will finish cooking in the hot tomato liquid. *Tip: I added 4oz. chopped imitation crab meat to these and it turned out great.
  • 5. Build tacos by adding the shrimp filling to a soft shell tortilla and top with a squeeze of lime juice, shredded cheese & sour cream & jalapeno slices. These are a bit spicy but you can reduce the heat by eliminating part of the red pepper flake and/or jalapenos.

6-8 sprig(s) corn or flour tortillas
10 large shrimp, peeled & deveined
1/4 medium yellow onion, thinly sliced
1/2 medium red bell pepper
1 clove garlic, minced
1 tsp cumin
1 pinch red pepper flakes
1 tsp garlic powder
1-2 Tbsp cilantro, chopped dried works too
1 can(s) stewed tomatoes, mexican
1/2 c cabbage, thinly sliced
1 lime, halved
1 c shredded cheddar cheese
sour cream
jalapenos, fresh or pickled
1-3 Tbsp canola or olive oil for sauteing

SHRIMP FRA DIABLO

A thick, spicy sauce of garlic, olive oil, and fire-roasted tomatoes is sauteed with shrimp or your favorite seafood. Legend has it that it was named for Michele Pezza, also known as 'Fra Diablo' (Friar Devil), who helped push Napoleon's forces out of Naples. Serve the sauce over hot pasta, or, my favorite, hot couscous cooked with olive oil and garlic.

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Cook and stir shallot and garlic in hot oil until tender, about 5 minutes. Add red pepper flakes; cook and stir to release flavor, about 1 minute. Stir fire-roasted tomatoes and tomato paste into the shallot mixture. Thin the sauce by stirring white wine into the mixture; cook and stir until sauce becomes thick and bubbly, 4 to 5 minutes.
  • Reduce heat to medium-low. Add shrimp to the tomato mixture; cook and stir until shrimp are pink and cooked through, about 5 minutes. Season with parsley, basil, and black pepper.

  • In a medium skillet over medium-high heat, add the olive oil, sauté the yellow onion for 3-4 minutes or until translucent. Add the garlic and sauté 30 seconds more.
  • Transfer to a blender with the tomatoes, cilantro, chipotle in adobo, brown sugar and ½ a teaspoon salt.
  • In the skillet, add the butter and allow to melt. Add the corn, zucchini, red onion, garlic powder, oregano, ½ teaspoon salt and pepper. Sauté until softened and browned on the edges, stirring occasionally, about 8 minutes. Transfer to a serving platter and squeeze lime juice over the top.
  • Transfer the sauce from the blender to the skillet and add the shrimp. Coat the shrimp with the sauce and allow them to cook in the sauce until cooked through and sauce has thickened a bit, about 5 minutes.
