SHRIMP SAHANAKI WITH GREEK CHEESES AND TOMATOES

This is a fantastic Greek appetizer/main dish. Serve with a glass of chilled white wine and lots of bread for the sauce.

Shrimp Sahanaki with Greek Cheeses and Tomatoes image

Steps:

  • Heat 1/3 cup oil in medium saucepan over medium heat.
  • Add onion and sauté until golden-brown, about 12 minutes.
  • Add tomatoes, 4 tblsps parsley, garlic, cayenne and ouzo.
  • Season to taste.
  • Bring to boil.
  • Reduce heat, cover and simmer until sauce thickens, about 25 minutes.
  • Add shrimp to sauce and cook for a further 6-8 minutes, until shrimp are cooked through.
  • Remove from heat.
  • Sprinkle feta, kasseri and parsley over and cover with lid of saucepan.
  • Allow to sit for 5 minutes, until cheeses have started melting.
  • Give a gentle stir to distribute cheeses and distribute amongst serving plates.
  • Use crusty bread to dip into the delicious sauce.

1 medium onion, finely chopped
1 lb tomatoes, peeled,seeded and chopped
4 tablespoons chopped parsley
1 clove garlic, minced
1 pinch cayenne
1/4 cup ouzo
1 lb large raw shrimp, peeled and deveined (tails left on)
4 ounces feta cheese, crumbled
4 ounces kasseri cheese, cut in ½ inch cubes (use gouda at a pinch)
1/4 cup minced parsley
fresh crusty bread

  • Clean and prepare the shrimps. Removing their mustaches, legs, and shells except the top and bottom shell. See text above for thorough instructions.
  • Heat a splash of olive oil in a non-stick pan over high heat. Add the shrimps and cook for about a minute on each side.
  • Stir in the bell pepper and add the splash of wine. Cook for a minute or so for the wine to evaporate.
  • Add in the fresh tomato sauce and a splash of water if the sauce is too thickened. Reduce heat to medium-low and simmer covered, for about 12 minutes. Flip the shrimps at least once.

  • In a small bowl, toss the shrimp with 1 tablespoon of the olive oil, the lemon zest, 1 tablespoon (or half) of the lemon juice, 1 clove of the minced garlic, 1/4 teaspoon of kosher salt, and 1/8 teaspoon black pepper. Stir to coat and set aside.
  • Sauté the diced onion in 2 tablespoons olive oil over medium-high heat in a large skillet with a cover until softened and starting to brown (about 3 minutes).
  • Add the remaining 2 cloves minced garlic, crushed red pepper (1/4 teaspoon), and dried oregano (1 teaspoon) to the onions. Stir and continue sautéing until fragrant, about 30 seconds.
  • Add the white wine (1/4 cup) and remaining lemon juice (about 1 tablespoon) and stir to deglaze, scraping any browned bits from the bottom. Add the diced tomatoes (28 oz.) , and the remaining 1/4 teaspoon kosher salt, and 1/8 teaspoon black pepper to the skillet. Stir and bring to a simmer (you can cover if it gets too bubbly).
