SHRIMP SCAMPI FOR ONE
Steps:
- 1) Cook pasta according to package. Reserve some of the cooking water for the sauce later. Drain the pasta and set it aside. 2) Mince garlic and shallots and clean the shrimp if they aren't already cleaned. 3) Add butter to pot over medium heat. Once hot and melted, added shallots and garlic and cook for a minute until soft. 4) Add shrimp along with a splash of white wine, and the crushed red pepper. Cook shrimp about 90 seconds a side until they are just cooked. Try not to overcook them. 5) Add cream to the shrimp and stir. The sauce should reduce nicely. 6) Add pasta back into the pot and stir to combine. Season with salt and pepper. If sauce is too thick, add a bit of reserved pasta water to thin it out. Don't make it too thin though! Serve immediately!

Steps:
- Bring a large pot of salted water to a boil. Stir in pasta and return pot to boil. Cook until al dente. Drain well.
- Melt butter in a large saucepan over medium heat. Stir in garlic and shrimp. Cook, stirring constantly, for 3 to 5 minutes.
- Stir in wine and pepper. Bring to a boil and cook for 30 seconds while stirring constantly.
- Mix shrimp with drained pasta in a serving bowl. Sprinkle with cheese and parsley. Serve immediately.

Steps:
- Combine olive oil, lemon zest, lemon juice, red pepper flakes, and dried parsley in a small bowl. Add shrimp and toss to coat. Marinate for 15 to 20 minutes.
- Melt butter in a pot over medium-high heat. Add olive oil. Stir in orzo and onion, toss to coat, and cook, stirring frequently, until onions are translucent and orzo is lightly toasted, 4 to 5 minutes. Mix in garlic and cook until fragrant, about 30 seconds.
- Deglaze pot with white wine and stir until wine has cooked off. Pour in chicken broth and season with salt and pepper. Cook, stirring frequently, until orzo is tender yet firm to the bite, 8 to 10 minutes. Add peas and shrimp with marinade to the pot, cover, and cook, stirring occasionally, until shrimp are light pink, 3 to 4 minutes.
- Divide between 2 dishes, sprinkle with fresh parsley, and garnish with lemon slices.

- 1. Put the first 4 ingredients in a microwave safe dish and cook for 1 minute. Remove from microwave.
- 2. Add the shrimp, lemon juice and oregano and mix together.
- 3. Put on lid and microwave 1 minute more.Remove and check shrimp to make sure they are cooked through. They should be orange and opaque.
- 4. If the shrimp are still translucent and under cooked put back and cook for 15 seconds intervals until totally cooked through.
- 5. Sprinkle with parsley.

- Fill a medium saucepan with water and bring to a boil over medium-high heat. Add the linguine to the boiling water and reduce the heat slightly to maintain a simmer.
