Steps:

  • In a bowl, toss shrimp with 1 teaspoon garlic and 1/2 teaspoon salt. Heat a large skillet over medium-high. Add oil and shrimp and cook until they begin to curl. Turn and cook until just opaque, about 2 minutes total. Transfer to a plate.
  • Reduce heat to medium. Add remaining 1 tablespoon garlic and red-pepper flakes to skillet; cook until fragrant, about 15 seconds. Add wine, increase heat to high, and boil until reduced to about 2 tablespoons, 2 to 3 minutes.
  • Add shrimp stock and lemon juice; boil 30 seconds, then remove from heat. Stir in butter to form an emulsified sauce. Return shrimp to skillet and toss to coat. Season with salt, pepper, and more lemon juice. Sprinkle with parsley and serve.

1 pound large shrimp, peeled and deveined
4 teaspoons minced garlic
Kosher salt and freshly ground pepper
1 tablespoon extra-virgin olive oil
Pinch of red-pepper flakes
1/2 cup dry white wine
1/4 cup Quick, Concentrated Shrimp Stock (optional)
1 tablespoon fresh lemon juice, plus more for serving (optional)
3 tablespoons cold unsalted butter
1/4 cup chopped fresh parsley

THE BEST SHRIMP SCAMPI

A classic menu item from every great Italian-American restaurant, this shrimp scampi hits all the right notes - buttery, lemony, garlicky. We love it for its simplicity and balance of flavor (copious amounts of butter help, too!). But while it looks and tastes fancy, this dish is actually very easy to make. The white wine sauce gets a spicy finish from red pepper flakes, perfect for soaking up with good crusty bread or cooked pasta.

Steps:

  • Heat a large nonstick skillet over medium heat. Pat the shrimp dry with paper towels and sprinkle with salt and pepper.
  • Melt 2 tablespoons of the butter in the skillet. Add half the shrimp and cook until golden pink, about 2 minutes per side. Transfer the shrimp to a bowl. Melt another tablespoon of the butter in the skillet and cook the remaining shrimp.
  • Return the skillet to medium heat. Add 1 tablespoon of the butter and let it melt. Add the garlic and red pepper flakes and cook until fragrant, about 30 seconds.
  • Stir in the wine and lemon juice. Increase the heat to high and boil the liquid until it thickens slightly, about 1 minute. Remove the skillet from the heat and stir in the remaining 2 tablespoons butter and the parsley. Add the shrimp back to the skillet and toss to coat with the sauce. Transfer to a serving dish and top with more chopped parsley. Serve with crusty bread or pasta.

1 1/2 pounds jumbo shrimp, peeled, deveined and tails on (see Cook's Note)
Kosher salt and freshly ground black pepper
6 tablespoons unsalted butter
1 tablespoon grated garlic (about 3 cloves)
1 teaspoon crushed red pepper flakes
1/3 cup dry white wine
2 tablespoons freshly squeezed lemon juice from about 1 lemon
1 tablespoon chopped flat-leaf parsley leaves, plus more for garnish
Crusty bread or pasta, for serving

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil, add pasta, and cook until al dente. Drain pasta, and set aside.
  • In a large skillet, melt butter over medium heat. Add most of the garlic, keeping some for later. Coat the garlic completely with butter. Do not let the garlic brown. Add shrimp, and toss to coat. Immediately remove pan from heat; shrimp will not be cooked yet.
  • Sprinkle the shrimp with breadcrumbs (enough to coat the shrimp), and transfer the entire mixture to a medium casserole dish. Pour wine and the lemon juice over the shrimp. Cover, and bake at 350 degrees F (175 degrees C) for 10 minutes.
  • Remove cover, and bake an additional 5 minutes.
  • In a small saucepan heat olive oil with remaining garlic. Toss the pasta with the olive oil and garlic mixture. Serve the shrimp over the pasta with additional lemon slices on the side.

  • Start with the Basics. Shrimp, butter, olive oil, and garlic hit the oven. Deliciousness ensues. "Loved, loved, loved this," raves naples34102. "The seasonings are classic and perfect but it was the cooking method that particularly impressed me.
  • Add Wine and Shallots... and Maybe Mushrooms. "I like to use shrimp and scallops together in this recipe," says jrdog. "It turns out great every time I make it."
  • Do It with Dijon. Dijon mustard adds serious zing, zang, zip to an easy shrimp scampi recipe. You'll make a quick pansauce with butter, Dijon mustard, garlic, red pepper flakes, lemon juice, and parsley.
  • Toss Your Scampi on the Grill. This healthy shrimp scampi recipe does away with the butter. But adds olive oil, lemon juice, garlic, and parsley. It's a light shrimp scampi that you'll finish on the grill.
  • Add Spinach to Your Scampi. This recipe is done in the style of Florence. Typically, that means "spinach." And here it also means pesto and tomatoes. This also qualifies as a healthy shrimp scampi recipe if you drop the butter and go with healthy olive oil.
  • Dredge 'em and Fry. Shrimp are dredged in a little flour and quickly fried in olive oil with garlic, red bell pepper, and diced tomato. Finish your scampi with a white wine and butter sauce.
  • Bring Some Heat. This baked shrimp scampi gets it done with cayenne pepper... and Italian bread crumbs. "We like it spicy and garlicky," says WannaBACook.
  • Serve Over Veggie Noodles. Replace pasta noodles with zucchini noodles for a low-carb approach to serving shrimp scampi. You can spiralize the noodles yourself or use convenient pre-cut packaged zoodles from the produce section.
  • Go Rogue with a Surprising Combo. Don't let the recipe title scare you away from trying this tasty appetizer made of shrimp scampi baked with a savory cream cheese filling inside a puff pastry shell.
  • Do It in One Pot... with Orzo. This simple shrimp recipe is "a different take on classic shrimp scampi," says Bren. "It's cooked in one pot and is ready in under 45 minutes.
