EASY PEACH CRISP
This dish is great when you want something sweet and fruity but don't want to spend too much time in the kitchen. And it gets even sweeter with a scoop of ice cream, or frozen yogurt on the side. YUMMY!

- 1. Preheat oven 375 degrees
- 2. Prepare your choice of fruit mixture as indicated in ingredients list. Cover bottom of buttered cake pan with mixture.
- 3. Combine flour, oats, brown sugar, cinnamon, nutmeg and salt together in bowl. Cut butter in dry ingredients until mixture is crumbly. Sprinkle topping over fruit and bake in a moderate oven. Serve warm, plain or with whipped or ice cream. Square pan: 8 inch or 6 cups. Cooking time: About 30 minutes. Yield: 6 to 8 servings.
SIMPLE PEACH DELIGHT CRISP
I was looking for something quick, simple and sweet, for dessert but not too sweet. I looked through the cupboards and this is what I came up with. It just hit the spot, not to sweet and definitely quick. My youngest son ate two bowls of it.

- Preheat oven to 350*.
- In small bowl combine cereal, sugar, flour, and butter; mix well and set aside.
- Place drained peaches in ungreased 2-quart casserole dish. Sprinkle a little (or to taste)cinnamon and nutmeg over the peaches. I used a little sprinkle of both.
- Top with cereal mixture. Bake 15-20 minutes or until golden brown.
- Serve with either a little cream poured over the top while still warm, a scoop of vanilla ice cream, or a little (or a lot) of whip cream. I chose a little cream for my serving and it just kicked it up a notch on the comfort level.

- Preheat oven to 350°. In a large bowl, combine flour, brown sugar and salt. Cut in butter until crumbly. Pat into a greased 9-in. square baking pan. Bake until lightly browned, about 15 minutes. , Meanwhile, drain the peaches and reserve juice in a small saucepan. Stir in the sugar and cornstarch until smooth. Bring to a boil; cook and stir until thickened, 1-2 minutes. Remove from the heat; stir in peaches. , Pour over crust. For topping, combine oats, brown sugar and flour. Cut in the butter until crumbly. Sprinkle over filling. Bake until golden brown and bubbly, 25-30 minutes.

My family actually calls this peach cobbler but the crispy shortbread-type crust makes it a crisp. Very good with ice cream or sprinkled with pecans before baking.

- Layer the peaches in a 9x13 inch baking pan. In a large bowl, mix the flour, sugar, salt and cinnamon. Slice the butter into chunks and mix it into the dry ingredients until it looks like pea size crumbs. Sprinkle crumbs over peaches.
