SIMPLY ELEGANT STUFFED CHICKEN BREAST #5FIX

Simply Elegant Stuffed Chicken Breast #5FIX image

Steps:

  • Preheat oven to 350 degrees.
  • In large bowl mix potatoes and stuffing mix (if seasoning pack and bread is packaged separate, mix both together).
  • Pound chicken breast to about 1/4 inch thick.
  • At this point you can cut your chicken to make 12 smaller rolls or leave whole and make 6 larger ones.
  • Season chicken with bouillon, (use like you would salt).
  • Spoon about 1/2 cup mixture onto edge of each chicken breast and roll, securing with tooth picks.
  • Season outside with bouillon.
  • Bake on nonstick baking sheet for 30 to 40 minutes, depending on size.
  • Heat gravy and serve over chicken.

24 ounces Simply Potatoes Traditional Mashed Potatoes
16 ounces seasoned stuffing mix (any flavor I used chicken)
6 boneless skinless chicken breasts
2 tablespoons chicken bouillon granules
12 ounces chicken gravy (turkey flavor will work)

ELEGANT STUFFED CHICKEN BREAST

This is an easy recipe, simple to make - wonderful for the family and elegant enough to serve for company. You can prepare it ahead, just wait to sprinkle on the crumbs until just befor popping it in the oven. Panko crumbs are best but you may sub fresh bread crumbs. You may double this recipe. You will not need to double the soy/honey glaze as there will be enough to paint the breasts

Elegant Stuffed Chicken Breast image

Steps:

  • Preheat oven to 375°F.
  • After defrosting and squeezing the spinach add the garlic & nutmeg, mix well, set aside.
  • In a small sauce pan mix together the Soy, honey, chili flakes and cornstarch heat to boiling. Set aside to cool.
  • Cut a pocket in each of the chicken breasts and place a wedge of cheese in it, add 2 oz of the spinach mixture, Sprinkle with pepper. Close the breast and place the breast on a lightly oiled oven proof pan.
  • Paint the top of the breasts with the soy/honey glaze, do not bother to paint under the breasts.
  • Sprinkle with the Panko crumbs.
  • Bake in 375F oven for apprx 25 minutes or until golden and breasts are cooked through.

2 garlic cloves, smashed
4 ounces frozen spinach, chopped, thawed and squeezed dry
1/4 teaspoon nutmeg (or a bit more)
1 teaspoon honey
2 tablespoons soy sauce
1/2 teaspoon chili flakes (or less)
1/4 teaspoon cornstarch
2 boneless skinless chicken breast halves
32 g Laughing Cow light swiss cheese (2 wedges)
pepper
4 tablespoons panko breadcrumbs or 4 tablespoons fresh breadcrumbs

Steps:

  • Place chicken with skin side down on a piece of heavy-duty foil large enough to fold over the chicken. Sprinkle with salt and pepper; set aside. In a skillet, saute onion and celery in butter until soft; stir in seasonings, bread and broth. Place in cavity of chicken; fold over top and seal. Place in a small baking pan. Bake at 375° for 45 minutes. Open foil and bake 5 minutes more or until chicken is tender, juices run clear and stuffing is lightly browned.

  • Split toppings among chicken; place in slits. Wrap with bacon or prosciutto, if needed. Place chicken breasts on a greased sheet pan or baking dish (make sure it has sides so the fat doesn't drip down into your oven). If breasts are wrapped in bacon, place on a greased rack placed over sheet pan so bacon crisps on all sides. Bake for 20 minutes or until chicken is cooked through (internal temp should reach 165F).
  • NOTE: If topping with shredded cheese, add after 15 minutes of baking time. I use about 1/4 cup per breast.
