Potatoes on skewers image

Steps:

  • Par-boil new potatoes for five minutes, then thread on skewers with some large, peeled, halved salad onions and fresh bay leaves. Brush with olive oil and sprinkle with sea salt. BBQ or grill for about 10 minutes turning occasionally. Serve simply with salt or your favourite dips - soured cream or mayonnaise-based ones would be great.

Steps:

  • Place the potatoes and water in an ungreased microwave-safe 2-qt. dish. Cover and microwave on high for 10-12 minutes or until almost tender, stirring once; drain. In a large bowl, combine the remaining ingredients; add potatoes. Cover and refrigerate for 1 hour. , Drain, reserving mayonnaise mixture. On six metal or soaked wooden skewers, thread potatoes. , Grill, uncovered, over medium heat for 4 minutes on each side, brushing occasionally with reserved mayonnaise mixture or until potatoes are tender and golden brown.

Steps:

  • Soak four 8-inch wooden skewers in water for 30 minutes.
  • Scrub potatoes.
  • Cut any large potatoes in half.
  • In a large saucepan cook potatoes, uncovered, in boiling salted water to cover for 5 to 10 minutes or until almost tender. Drain.
  • Or place potatoes in a microwave-safe bow with 2 tablespoons water, cook covered, on 100 percent power (high) for 5 to 7 minutes or until almost tender.
  • Preheat oven to 475 degree F.
  • Thread potatoes on the 4 soaked wooden skewers.
  • Place kabobs on a baking sheet.
  • In a small bowl combine melted butter and olive oil.
  • Brush potatoes with butter mixture.
  • Sprinkle with thyme, salt, and pepper. Roast, uncovered, for 20 to 25 minutes or until golden brown.

Grilled Greek New Potato Skewers image

Steps:

  • In a large pot of boiling water, cook potatoes until just tender, about 8 minutes. You no NOT want mushy potatoes! Drain.
  • Meanwhile in large bowl, mix olive oil, oregano, garlic, salt, pepper and pepper flakes. Add boiled potatoes, tomatoes and sweet peppers and gently toss to coat.
  • Alternating vegetables, thread each of 4 skewers with 4 potatoes, 2 tomato wedges and 4 pepper chunks. Do not discard remaining oil.
  • Cook on greased grill for 4 to 6 minutes or until potato skins are crisp, turning often and brushing them with remaining oil mixture.

16 new potatoes (about 1 pound)
2 tablespoons olive oil
1 tablespoon fresh oregano, chopped or 1 teaspoon dried oregano
1 garlic clove, minced
1/2 teaspoon salt
1 pinch pepper
1 pinch hot pepper flakes

Steps:

  • Scrub potatoes and cut in half or quarters if they are large.
  • Put into microwave safe 1 1/2 quart covered casserole dish with water.
  • Micro on 100% power for 4 to 5 minutes or until just tender, stirring once.
  • Drain and cool slightly.
  • In a bowl, combine mayo,broth, Italian seasoning and garlic powder.
  • Add potatoes and toss to coat.
  • Cover, chill for at least 1 hours Thread potatoes onto 4 long skewers and leave 1/4" between pieces.
  • Grill on an uncovered grill directly over medium coals for 12 to 14 minute or until golden brown, turning occasionally.
  • This can also be done under your oven broiler.
  • Cooking time includes chilling.

Lemony chicken skewers, herbed new potatoes & apple coleslaw image

Steps:

  • If you are using wooden skewers, soak them in water for 10 mins. Heat the grill to high and place a non-stick baking tray beneath it. In a large bowl, mix the marinade ingredients, then add the chicken, turning it to ensure it is thoroughly coated. Cover and set aside.
  • Put the potatoes in a large pan of boiling water and cook until a fork easily pierces them - about 12 mins. Meanwhile, mix the oil and herbs in a small bowl.
  • While the potatoes are cooking, make the dressing for the coleslaw. Mix together the crème fraiche, mustard and lemon in a large bowl. Add all the vegetables and the apple, and stir well.
  • Drain the potatoes and return them to the pan. Pour the herb mixture over them, stir gently to mix, cover to keep warm and set aside.
  • Finally, divide the chicken between 4 skewers and place on the hot baking tray, spooning excess marinade over the chicken. Put the tray under the grill and cook for 6-8 mins, turning the skewers every 2 mins or so to ensure even cooking. Cut open a piece of chicken to ensure it's cooked through. Serve with the potatoes and coleslaw, reserving half the coleslaw for Smoked mackerel platter (see 'goes well with').

Steps:

  • Prick potatoes with fork; place in 3-qt. microwaveable casserole. Add water; cover with lid. Microwave on HIGH 10 to 12 min. or until potatoes are almost tender. Drain; rinse with cold water. Cool.
