MAKEOVER BANANA NUT BREAD
This slimmed-down banana bread with applesauce is one of our favorite ways to make banana bread. On top of swapping out the butter, the amount of sugar is also decreased, too, by adding a little honey and using more banana. - In a large bowl, beat butter and sugar for 2 minutes or until crumbly. Beat in egg, then egg white, beating well after each addition. Beat on high speed until light and fluffy. Stir in the bananas, applesauce, honey and extract. Combine the flours, baking soda and salt; gradually add to banana mixture just until moistened., Pour into a 9x5-in. loaf pan coated with cooking spray. Sprinkle with nuts. Bake at 325° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool.

Steps:
- Preheat oven to 350°F (175°C).
- In a large bowl, mash the ripe bananas. Add the eggs, oil, sugar, and cinnamon, mixing until evenly incorporated.
- Add the flour and mix until the batter has no large pockets of flour. Set aside.
- In a pot over medium-low heat, melt the butter, then mix in the brown sugar until dissolved.
- Bring up the heat to medium-high, cooking until the mixture starts bubbling and the sugar has melted.
- Remove the caramel from heat and pour into a greased 9x9-inch (23x23 cm) baking pan.
- Lay the banana slices evenly on top of the caramel.
- Spread the banana bread batter on top.
- Bake 40-50 minutes.
- Cool until the bottom is barely warm and use a knife to loosen the edges from the pan.
- Place a plate upside-down on top of the pan, then invert the pan, flipping the banana bread onto the plate.
- Slice, then serve with vanilla ice cream.

- 1. In a mixing bowl, beat the sugar and eggs together until light and fluffy. Stir in the bananas, applesauce and vanilla. Combine the flours, baking soda and salt; stir into banana mixture just until moistened. Add nuts.
- 2. Pour into a loaf pan that has been sprayed with cooking spray. Bake at 325 degrees 60 to 75 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

SLIMMED DOWN BANANA BREAD

Steps:
- Grease 2 loaf pans and preheat the oven to 350.
- Combine flours, sugar, baking powder, baking soda, cinnamon and salt in a mixing bowl.
- In a separate bowl combine bananas and eggs.
- Add egg/banana to the dry ingredients all at once, stirring gently just to combine. Do not over mix or it'll be tough.
- Divide the batter between the two loaf pans as evenly as you can, smoothing the top. Bake at 350 for about 55 minutes or until a toothpick comes out clean if you poke the bread with it.
- Let cool in pan. You can serve the same day, but the flavor improves if you wrap tightly and store overnight. Banana bread keeps well and also freezes well.
