MINT SAUCE FOR LAMB

Steps:

  • Place mint leaves in a small bowl. Stir in water, vinegar, sugar, salt and pepper until sugar is dissolved. Cover and let steep for 20 minutes, then serve immediately with lamb.

Slow-Cooked Leg Of Lamb With Fresh Mint Sauce image

Steps:

  • Preheat oven to 250 degrees. Mince garlic and mix with salt. With a small sharp knife, poke holes all over lamb and insert some garlic-salt mixture into each hole. Smear any remaining mixture on lamb skin, then sprinkle with additional salt, if desired, and pepper. Place lamb in roasting pan, cover lightly with aluminum foil and put it in oven.
  • Cook for 4 hours, then remove foil. Cook for about 2 more hours, or until a sharp, thin-bladed knife can be easily inserted into meat. If lamb skin is not browned, raise heat to 400 degrees for 10 minutes.
  • To make mint sauce, combine vinegar and sugar in a small saucepan with 1/3 cup water and a pinch of salt. Bring to a boil and cook for about 30 seconds longer. Cool for a few minutes, then place in a blender with mint; blend until smooth. Keep at room temperature until ready to serve (or refrigerate overnight and return to room temperature before serving).
  • Carve lamb and spoon pan juices over slices. Serve hot, passing sauce at table.

Steps:

  • Mix first 5 ingredients in large glass baking dish. Season with generous amount of pepper. Add lamb, turning to coat. Cover and refrigerate overnight.
  • Preheat oven to 450°F. Drain lamb and transfer to large roasting pan. Season both sides with salt and generous amount of pepper. Arrange fat side down in pan. Roast 15 minutes. Reduce oven temperature to 375°F and continue roasting until thermometer inserted in thickest part of lamb registers 130°F for rare, about 20 minutes. Let stand 10 minutes. Cut into slices. Arrange on platter. Garnish with mint sprigs and serve.

Steps:

  • Heat oven to 120C/fan 100C/gas ½. Put your largest lidded casserole on the hob and brown the seasoned leg of lamb on all sides - do this very thoroughly until it is a good dark brown as it will not brown during the cooking. (If you don't do it now, it will end up beige.) If the lamb sticks, add a drizzle of oil - legs of lamb differ. Allow 10 mins on a high heat and put on the cooker fan to remove the smoke. Pour away any fat that has collected in the bottom of the pan.
  • Throw in the vegetables, followed by the wine and stock. Season and bring to the boil, then clap on the lid and put in the oven. Bake for 7 hrs, turning twice. After 5 hrs the meat will be cooked and offer no resistance to the knife.
  • There is no need to rest the meat when cooked in this way, but to finish the sauce, transfer the meat and vegetables to a serving dish. Strain the sauce into a jug and pour or blot away the fat with kitchen paper. Pour the sauce into a pan then boil the liquid hard to reduce by a quarter, by which time it will be rich and flavoursome. Adjust seasoning, add the Armagnac if you wish, and serve alongside the lamb, which should be served with a spoon, a la cuillère as the French call it.

Steps:

  • Preheat oven to 450 degrees, with rack in lower third. Rub lamb with a generous amount of salt and pepper, then rub with oil. With the tip of a sharp paring knife, cut twenty 1/2-inch-deep slits all over lamb; insert garlic slivers into openings.
  • Place lamb on a roasting rack set on a rimmed baking sheet; place in oven. Immediately reduce oven temperature to 325 degrees. Roast lamb until an instant-read thermometer inserted in the thickest part (avoiding bone) registers 125 degrees to 135 degrees for rare, or 135 degrees to 140 degrees for medium, 1 1/4 to 1 3/4 hours. Remove from oven; let rest 10 to 15 minutes before carving.
  • Meanwhile, make the mint sauce: In a small saucepan, bring vinegar, sugar, and water to a boil. Reduce heat; simmer until liquid is syrupy and reduced to 1 cup, 10 to 15 minutes. Remove from heat; stir in mint, and let cool completely.

GRILLED HERB-ENCRUSTED LEG OF LAMB WITH FRESH MINT SAUCE

This is a very easy but delicious tasting lamb. I don't particularly care for lamb, but I made it because it's a favorite of my husband's and my mom's. My dad isn't much of a fan either, but he said it's the best lamb he's ever eaten. THIS MUST MARINATE FOR AT LEAST 24 HOURS!!! The sauce shouldn't be made ahead of time, but it takes only a couple of minutes to throw together. The sauce is also a must to the overall success of the dish; it's much better than mint jelly, IMHO. I cut the recipe in half and it makes a nice amount for four people with a bit of leftovers for sandwiches the next day (although I don't reduce the amounts of the marinade). I serve this with recipe#34382 and recipe#50847.

Grilled Herb-Encrusted Leg of Lamb With Fresh Mint Sauce image

Steps:

  • At least 1 day ahead, marinate the lamb: Set the lamb flat on a large cutting board. Trim any excess fat and open like a book to make an even thickness all around. Lay a piece of plastic wrap on top of the lamb; pound to flatten slightly to make a more even thickness. Cut the meat into 2 or 3 more manageable pieces. Sprinkle all over with 1 T. of the salt and 1 t. of the pepper.
  • In a small bowl, mix the mustard, garlic, thyme, rosemary and the remaining 1 T. of the salt and 1 t. pepper. Spread all over the lamb, transfer to a large nonreactive dish, cover and refrigerate for at least 24 hours and up to 2 days.
  • Just before grilling, make the sauce: In a medium bowl, whisk 1/4 cup water with the sugar, salt and pepper - they don't have to dissolve completely. Stir in the mint, vinegar and oil. Let sit while the lamb grills. Taste and season with more sugar, salt and pepper if needed (the sauce should have a sharp, acidic tang to complement the rich lamb).
  • Grill the lamb: Heat a gas grill to medium high or prepare a charcoal fire with hot and medium-hot areas. Put the lamb on the grill (on the hotter part if using a charcoal fire) and cook (covered if on a gas grill) without disturbing it until it's nicely browned, about 6-8 minutes. Flip, reduce the heat on the gas grill to medium (or move to the cooler part of the charcoal fire), and cook until and instant-read thermometer inserted into a thicker part of the lamb registers 130 degrees F for med-rare, 5-8 more minutes.
  • Tranfer the lamb to a cutting board, tent with foil, and let rest for 10 minutes. Slice thinly across the grain and serve with the mint sauce.

  • Heat the oil in a large non-stick frying pan. Add the lamb and brown on each side for 4-5 mins. Set the slow cooker to low. Melt the butter in a saucepan until foaming, then stir through the flour. Whisk in the stock gradually until incorporated, add the wine and bring to the boil. Set aside.
  • Put the onion, garlic, thyme and rosemary into your slow cooker and sit the lamb on top. Pour over the lamb gravy. Put the lid on and cook for 8 hrs or until soft and tender.
  • Remove the lamb and set, covered, on a plate. Strain the liquid into a pan and simmer until slightly thickened. Serve the lamb thickly sliced or shredded (it'll be quite soft) with mashed potatoes, green veg and the gravy.
