CHIPOTLE COCOA-RUBBED SALMON

Chipotle Cocoa-Rubbed Salmon image

Steps:

  • Preheat the broiler to low. Place an oven rack in the upper third of the oven. Line a baking sheet with parchment paper.
  • Stir together the House Seasoning, chile powder and brown sugar in a small bowl. Pat the salmon fillets dry and place skin-side down on the prepared baking sheet. Brush the top of each filet with olive oil and then rub the spice mixture over the top and sides.
  • Broil until the salmon is not quite cooked through and feels firm to the touch, about 10 minutes. Sprinkle with sea salt before serving.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

1 teaspoon chipotle chile powder
1 teaspoon unsweetened cocoa powder
1 teaspoon packed dark brown sugar
Four 6-ounce salmon fillets
1 tablespoon olive oil
Flaky sea salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

SLOW-ROASTED SALMON

We cooked with wild salmon. Alaskan sockeye has a rich flavor; king is pricier and fattier. If you like, try Tasmanian ocean trout as an alternative. Make tabbouleh salad, and toast pita bread to serve with the salmon.

Slow-Roasted Salmon image

Steps:

  • Preheat oven to 250 degrees.
  • Mix together tomato, orange, and chile paste. Cut a 1-inch slit down the center of the flesh side of each salmon fillet. Season with salt, and spoon tomato mixture into slits.
  • Place in a large baking dish, mixture side up. Roast in oven for 25 minutes, until opaque on outside with a pinkish center.

Steps:

  • Mix chipotle rub ingredients, and stir well until sugar and salt dissolved.
  • Rub half on the filets, and reserve other half.
  • Put Steaks in preheated oven for 15-20 minutes per inch of thickness at 225 degrees F.
  • Meanwhile prepare the sauce.
  • Combine first four ingredients for sauce and reduce to 3/4 cup.
  • Remove salmon from oven, and rub the rest of the glaze on them and grill under the broiler for 3-5 minutes, to your desired doneness.
  • Combine butter and cornstarch and add to the sauce to thicken, add scallions, and serve over salmon and rice.

  • In a medium skillet, cook the chipotle chiles over moderate heat, turning, until they are toasted, about 4 minutes. Let cool, then break up the chipotles and discard the stems and seeds.
  • In a spice grinder, combine the chipotles, cloves, cumin seeds and peppercorns and grind to a powder.
  • In the same skillet, heat the 3 tablespoons of oil. Add the garlic, shallots and ginger and cook over moderate heat, stirring occasionally, until softened, about 5 minutes. Stir in the ground spices and cook until fragrant, about 2 minutes. Add the tamarind and maple syrup and season with a big pinch of kosher salt.
  • Preheat the oven to 300°. Lightly season the salmon with kosher salt. Oil a large glass or ceramic baking dish. Spread the spice paste on both sides of the salmon and set the salmon skinned side down in the dish. Fold the thin tail end under itself to make the fillet an even thickness. Let the salmon stand at room temperature for 20 minutes.
