CHEDDAR WALDORF SALAD
Wherever I take this one-of-a-kind salad, people eat it until it's gone. I got the original recipe from my mother-in-law and adapted it to fit my tastes. My fondness for cheese and cranberries prompted my to toss them into the delicious mix.

- In a large bowl, combine the apples and pecans. Combine mayonnaise and 2 tablespoons sugar; add to apple mixture and mix well. Combine cranberries and remaining sugar; sprinkle over apple mixture. Top with cheese. Serve immediately.

- Whisk mayonnaise, sour cream, lemon juice, and sugar together in a large bowl. Add cheese cubes, apples, celery, grapes, and walnuts. Toss well with dressing. Season with salt and pepper, if desired. SERVING SUGGESTION Arrange washed romaine lettuce leaves on a platter or in a large salad bowl and spoon the salad over the leaves.

Steps:
- In a large bowl, toss the diced apples and pears in the lemon juice.
- Add the celery, onion, pecans, and smoked Gouda.
- Stir together the Dijon mustard, sugar, black pepper and mayonnaise. Gently fold into the salad and mix well. Add salt, if needed, to taste.
- Chill until ready to serve.
- Serve on a bed of baby spinach or other greens.

ASIAN SMOKED CHICKEN WALDORF SALAD
Steps:
- In a mixing bowl combine the mayonnaise, oils, garlic, ginger, and vinegar, and season with salt to taste and crushed red pepper.
- Remove skin and fat from chicken breast and cut it into bite sized pieces and add to the dressing.
- Dice the apples into 3/8inch cubes; wash and dry the grapes and toss the ingredients together; adjust the seasoning. Serve over Boston lettuce garnished with chives and walnuts.
