Steps:

  • Preheat a grill to medium. Oil the grill grates well.
  • Slice the potatoes lengthwise about 3/4 inch thick. Place the potatoes in a bowl and add 2 tablespoons canola oil, the paprika and 2 teaspoons each salt and pepper. Toss to coat.
  • Place the potatoes on the grill, cover and cook 5 minutes, then rotate them 90 degrees F and cook 5 to 10 more minutes. Flip the potatoes and repeat on the other side. They should be slightly puffed and golden brown. Remove and allow to cool completely. Dice into 3/4-to-1-inch pieces.
  • In a large glass bowl, combine the diced potatoes, celery, red onion and cilantro. In a medium glass bowl, combine the sour cream, mayonnaise, mustard, 1 teaspoon salt, 2 teaspoons pepper, the capers and lemon juice. Adjust the salt as needed.
  • Fold the mayonnaise mixture into the potato mixture until coated. Cover and refrigerate 20 to 30 minutes. Stir and adjust the seasoning as needed.

2 tablespoons canola oil, plus more for the grill
2 pounds Yukon gold potatoes (5 to 6 potatoes)
2 teaspoons smoked paprika
Kosher salt and freshly cracked pepper
1 cup diced celery (from 2 to 3 stalks)
1/2 small red onion, finely diced
1 tablespoon minced fresh cilantro
1/2 cup sour cream
1/2 cup mayonnaise
1 teaspoon yellow mustard
2 teaspoons chopped capers
Juice of 1/2 lemon

SMOKY TWO-POTATO SALAD

Old-fashioned potato salad this is not. It's cool, creamy and way more colorful than the old standby -- and it still goes great alongside burgers, brats and corn on the cob.

Steps:

  • Cut the new potatoes and sweet potatoes into 1-inch cubes (do not peel) and put in a medium pot (see Cook's Note). Add cold water to cover and bring to a boil. Lower the heat to medium and cook until barely fork-tender, 12 minutes. Drain the potatoes in a colander and immediately drizzle the vinegar over them; let cool.
  • Meanwhile, make the dressing: Combine the mayonnaise, yogurt, honey, chipotle chile, adobo sauce, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl.
  • Add the potatoes, green onions and cheese to a large serving bowl,. Pour the dressing over the potatoes and toss gently. Sprinkle with paprika and cilantro if using and serve.

Steps:

  • Heat the grill to high. Place the potatoes in a large saucepan and cover by 1-inch with cold water. Add 1 tablespoon of salt, bring to boil over high heat and cook until just cooked through, about 10 minutes. Drain, let cool slightly and halve.
  • While the potatoes are cooking, combine the mayonnaise, mustard, peppers, garlic, vinegar, paprika and salt and pepper in a blender or food processor and process until smooth.
  • Brush the cut sides of the potatoes with oil and season with salt and pepper. Grill cut side down until lightly golden brown, about 2 minutes.
  • Toss the potatoes with the red pepper mayonnaise while still warm, mashing slightly to break them up. Fold in the parsley and season with salt and pepper, if needed.

2 pounds small Yukon gold potatoes, scrubbed
Salt and freshly ground black pepper
1/2 cup prepared mayonnaise
2 tablespoons Dijon mustard
2 red bell peppers, grilled, peeled, seeded and diced
2 cloves garlic, chopped
1 tablespoon champagne or white wine vinegar
1 tablespoon Spanish smoked paprika
Canola oil
1/4 cup chopped flat-leaf parsley, plus more for garnish

ROASTED GARLIC AND SMOKED PAPRIKA POTATO SALAD

This recipe was inspired by and created with the secret ingredients for the RSC #15 contest. Qualifying ingredients were roasted garlic, smoked paprika, spicy brown mustard, thyme and eggs. My family absolutely loved it and were actually horrified to find that I didn't submit this one. :) For roasting garlic please see my Recipe #412117. This is also great with some cooked and crumbled bacon added in.

  • Add the potatoes to a pot or deep skillet along with cold water. Add enough water so that the potaotes are completely covered.
  • Bring the water to a boil and then adjust the heat to a simmer. Do not cover the pot. The potatoes will need 8-10 minutes to cook. Check in on them after 5 minutes by piercing with a fork. You don't want the potatoes to overcook, that will result in mushy potatoes. (Unless you are looking for a mashed potato salad).
  • Once cooked, drain the water from the potatoes. You can use a strainer or use a slotted spoon to gather them. Place the potatoes in a bowl to cool. Cooling is important.

  • Place the diced potatoes in a large stockpot and add enough water so that the potatoes are covered by 1 inch. Cook over medium-high heat until the water reaches a boil. Then reduce heat to medium to maintain the simmer, and continue cooking the potatoes for 5-8 minutes or until the potatoes pierce easily with a fork.
  • Drain the potatoes in a colander. Then return the potatoes to the stockpot, drizzle evenly with the vinegar, and let the potatoes rest for 20-30 minutes or until cool enough to handle.
  • Meanwhile, whisk together the mayo, celery salt, mustard and pickle relish in a medium bowl until evenly combined.
  • Once the potatoes are ready to go, add in the mayo mixture, diced eggs, celery and onion. Toss gently until evenly combined.

  • Dice the red potatoes in uniform pieces, probably a medium dice. Cover with water, add a couple of pinches of salt and bring to a boil. Lower heat, cover with the lid a little ajar and cook until fork tender.
  • When the potatoes are tender, drain and add them to a large bowl. While still hot add the vinegar, mayonnaise, dill, celery salt, and black pepper. Slightly break up the potatoes with a fork or a similar masher I described in the post. Stir to combine, cover with clear wrap and refrigerate for a couple of hours or overnight.
  • Remove from the refrigerator and add the eggs, the diced onions, the two relishes, and the jar of pimiento. You will probably need a little more mayonnaise. I just add a tablespoon or two until I get the right consistency. Check for salt and pepper. Add a little cayenne if you like. Add to your serving bowl and sprinkle with some smoked paprika. Enjoy!
