SMOKED SMOKY SAUCY COWBOY BEANS

I know it is a mouth full, but I looked at other recipes and none were actually smoked in a smoker, just in an indoor oven with liquid smoke. In 1997 I had some Cowboy beans and have not been able to find anything close till now. This recipe must be cooked in a smoker capable of burning wood. Smoked Smoky Saucy Cowboy Beans image

Steps:

  • Open beans and drain off excess fluid from top of beans, do not drain or rinse.
  • In a large mixing bowl add beans, onions, sauce and brisket and stir until well blended.
  • Find a large baking dish that will fit inside smoker or you may use 2 smaller dishes.
  • Pour mixture into a glass baking dish and place in smoker oven.
  • Add wood chips to smoker and cook for 2 hours @ 225 degrees.
  • Remove, STIR WELL and serve hot.
  • You may substitute pork or ground beef.

1/2 lb beef brisket, diced (smoked and cooked)

Steps:

  • In a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. , In a 5-qt. slow cooker, combine the beans, tomatoes and sausage mixture. In a small bowl, combine the barbecue sauce, ketchup, brown sugar, mustard, steak seasoning and Liquid Smoke if desired. Stir into bean mixture. , Cover and cook on low for 7-8 hours or until heated through.

1 pound bulk spicy pork sausage
1 medium onion, chopped
2 15-oz. cans pork and beans
1 can (16 ounces) kidney beans, rinsed and drained
1 can (16 ounces) butter beans, rinsed and drained

These are a great side, but I also love to just scoop some up in a warm tortilla as a meal. Found in the Chicago Tribune, with some modifications. I usually make this without the chili powder. Cooking time does not include soaking beans.

Cowboy Beans image

Steps:

  • Soak the beans overnight in lots of cold water. (Most recently, I have been using the Cook's Illustrated recommended method, soaking the beans in 4 qts water mixed with 3 tbl. table salt). Drain off the soaking water and rinse.
  • Put beans in a very large pot. Pour in the beer and enough fresh water to come up 2 inches over the beans. Add remaining ingredients except salt. Cover, heat to a boil, reduce heat to very low - just enough to bubble the liquid a little. Simmer until beans are tender, 2 to 3 hours.
  • If using ham hocks, remove, discard bones, chop and return to pot. Add salt to taste.
  • Note1: I've noted the comment regarding the time - I made this again, and it took me just under two hours to get to tender beans. It is important to soak the beans well, and older beans may take longer. The beans should be tender but whole - they should not start breaking down.
