Smoked Fish Salad

Steps:

  • Bring some water to a boil and blanch the ginger until tender; drain and dry; set aside.
  • In a mixing bowl combine oil, lemon juice, capers, salt and pepper. Just before serving, toss the spinach with most of the vinaigrette, reserving some for avocadoes. Peel avocado and slice into 3 by 1 inch pieces. Toss avocado with remaining dressing.
  • Set dressed spinach in the middle of each dinner plate. Place avocado slices in a crown around spinach. Place the pieces of smoked fish, alternating the sable with the salmon, around avocado. Garnish spinach with julienned ginger.

1 tablespoon very fine julienne of fresh ginger
3 tablespoons vegetable or nut oil
1 tablespoon or more fresh lemon juice
1 teaspoon capers, salt packed and rinsed
8 ounces curly spinach, stemmed, washed and cut into 1 by 3 inch strips
1/2 Haas avocado
1/4 pound smoked sturgeon or smoked sable
4 ounces smoked Nova Scotia salmon

Smoked Crayfish Salad image

Steps:

  • Note: The only tricky part of this dish is smoking the crayfish. I used a domestic smoker that you should be able to find at a good hardware or kitchenware store. Follow the instructions with your smoker and you shouldn't have any problems.
  • Bring the smoker to heat, then place in the crayfish tails and smoke over a moderate heat for 10 to15 minutes. To check if the tails are ready, take 1 piece out of the smoker and using a sharp knife, insert it into the thickest part of the tail. The flesh should be opaque in color, neither raw nor totally white. Take the tails from the smoker and leave to cool. If the tails aren't quite ready, just put back in the smoker and smoke a little more. The smoker will generate heat, so the hotter the smoker, the quicker the tails will cook. Once the crayfish are cool enough to handle, pry the meat from the shells and cut into thick chunks.
  • Place the salad leaves in a large bowl and scatter on the crayfish, the tomatoes and the cheese. Whisk the avocado oil and the lemon juice together, season well, then pour dressing over the salad, and gently toss together. Eat immediately.

2 pounds uncooked crayfish tails, split down the back to give 2 identical halves
2 large handfuls assorted salad leaves and greens (rocket, endive, salad burnet, radicchio, escarole, tat soi, etc)
16 small tomatoes, halved or whole
7 ounces (200 grams) goats cheese, choose one that isn't too dry, and crumble it
2/3 cup (150 milliliters) avocado oil
1 lemon, juiced
Salt and freshly ground pepper

Mazatlan Smoked Marlin Tacos image

Steps:

  • Heat the oil in a large pan over medium heat and saute the red peppers, onions and garlic until the onions are translucent and the peppers are tender, about 6 minutes. Add the chopped tomatoes and let the mixture cook until it changes color, about 6 minutes.
  • Stir in the tomato puree, olives, wine, parsley, capers, black pepper, chipotle chiles, guero chiles, bay leaves, oregano and thyme. Cover and cook until the flavors are well combined, about 6 minutes, and then incorporate the marlin. If it is dry, add a little more wine or water. Remove the bay leaves and oregano and thyme sprigs before serving.
  • Shred the cabbage and warm the tortillas in a hot pan. Put the tortillas in a thermal tortilla server to keep warm. Assemble the tacos by placing 4 ounces of the marlin mixture in 2 warm tortillas, one on top of the other one. Top with a substantial amount of shredded cabbage. Garnish with some mayonnaise and lime wedges, if desired. Serve immediately.

HOT SMOKED SWORDFISH WITH WHITE CLAM-GARLIC-PARSLEY SAUCE

Hot Smoked Swordfish with White Clam-Garlic-Parsley Sauce image

Steps:

  • For the swordfish: Stir together 8 cups water, the salt, sugar and peppercorns in a deep pot. Bring to a boil just to dissolve the salt and sugar; cool completely. Submerge the swordfish in the brine. Refrigerate for 12 hours.
  • Remove the swordfish from the brine and rinse well under cold water. Pat dry and allow to air dry for at least 1 hour. The exterior of the fish should feel sticky to the touch before smoking.
  • Prepare a smoker with maplewood chips and to an internal temperature of 200 to 225 degrees F.
  • Brush the fish very lightly with canola oil and sprinkle with salt and pepper. Smoke the fish for about 2 hours, adding chips through the first hour as necessary. You can keep adding chips the second hour if you prefer a much smokier flavor. Transfer the smoked fish to a large platter.
  • For the clam sauce: Remove the meat from half the clams and chop roughly. Heat the canola oil in a medium saucepan over high heat. Add the garlic and chile and cook for a few seconds. Add the chopped clams and cook, stirring, for another minute. Add the wine, bring to a simmer and cook until reduced by half.
  • Add the whole clams, cover the saucepan and cook, shaking the pan occasionally, until the clams open, 5 to 10 minutes. Stir in the butter. Remove from the heat and stir in the chopped parsley and lemon zest. Taste, and season with salt and pepper. Pour the sauce over and around the smoked swordfish, and scatter the parsley leaves on top.

2 to 3 tablespoons canola oil
2 dozen littleneck clams
2 tablespoons canola oil
3 cloves garlic, mashed to a paste with a little salt
1 small serrano chile, finely diced
1 cup white wine
1 tablespoon cold unsalted butter
2 tablespoons finely chopped fresh flat-leaf parsley, plus a handful leaves for garnish
Zest of 1 lemon
Salt and freshly ground black pepper
