Steps:
- Set up grill for direct cooking over medium heat and oil grate when ready to cook.
- For Quesadilla:
- Lay out 4 tortillas; top each tortilla with brie, smoked turkey, apricot preserves, and Jack cheese. Top with remaining tortillas.
- For Salad:
- In a bowl, toss to combine herbs and lemon juice. Season with salt and pepper; set aside.
- Place quesadillas on hot oiled grill for 3 to 4 minutes per side or until cheese has melted flipping with a spatula. Serve hot topped with mixed herb salad.
- Indoor:
- Prepare quesadillas as directed. In a skillet large enough to fit tortillas, heat 1 to 2 tablespoons of vegetable oil over medium heat. When oil is hot, carefully fry both sides of quesadillas for 2 to 3 minutes or until golden brown; turning with a large spatula. Garnish, as directed.

- In medium bowl, mash avocado. Stir in cream cheese, cumin, garlic powder, salt and pepper. Stir in tomatoes and chiles.
- Sprinkle 3/4 cup of the Monterey Jack cheese on 4 of the tortillas. Top each with turkey slice. Spread avocado mixture over turkey. Top with remaining turkey slices. Sprinkle with 3/4 cup of the Cheddar cheese. Top with remaining tortillas.
- In 12-inch skillet, melt 1/2 tablespoon of the butter over medium heat. Add 1 quesadilla; cook 2 to 4 minutes, turning once, until golden brown. Repeat with remaining butter and quesadillas. Garnish with remaining Monterey Jack and Cheddar cheeses. Top each with olive slice.

TURKEY QUESADILLA

- Place 2 tortillas on your board. Spread 1 with cranberry sauce and set aside. Sprinkle the cheese over the other one and crumble the stuffing on top. Add the green beans, turkey, and jalapeno peppers. Pick up the first tortilla and place it cranberry side down onto the filled one. Press gently but firmly to keep the quesadilla together.
- Spray a nonstick skillet with cooking spray and put it over medium heat. Place the quesadilla in the skillet and cook until the bottom is lightly browned and the cheese is melted, about 2 minutes. Flip the quesadilla and cook it on the other side for another 2 minutes. Slide it onto a cutting board, cut it into wedges, and serve.

- Turkey Prep: Soak the wood chips for at least 30 minutes. Prepare the grill for indirect medium heat (350° to 450°F) and place a foil pan under the grate to catch drippings. Drain and add one handful of apple wood chips to the smoker box of a gas or charcoal grill, following manufacturer’s instructions, and close the lid. Lightly brush the turkey breast with oil and season evenly with salt and pepper.
- Time to Smoke: Brush the grill grates. Once the wood begins to smoke, put the turkey breast on with skin side up, over the foil pan, over indirect medium heat with the lid closed as much as possible, until the skin is golden brown and the internal temperature reaches 165°F in the thickest part of the breast. Approximately 2 hours. Remove the turkey breast from the grill and let rest at room temp for 30 minutes uncovered.
- Quesadilla Fixins: Dice turkey into 1/2 inch cubes. The turkey breast will make about 8 to 10 cups of cubed meat. While the turkey is cooling, prep the onions and the peppers. Remove outer peel from onion and discard. Using a chef’s knife, cut onion in half. Remove the top of the onion where the stem attaches and the bottom of the onion being sure to minimize waste. Slice onion into 1/4 to 1/2 inch thick pieces. In a mixing bowl, toss the sliced onions with 2 tablespoons of oil and season with salt and pepper. Stem and seed the peppers, reserving as much of the meat as possible. Be sure to remove the white inner parts of the peppers. Toss the cleaned peppers with the remaining tablespoon of oil and season with salt and pepper. Adjust the grill for direct medium heat (350° to 450°F). Brush the grill grates clean and place grill pan on grill to preheat. Once pan has preheated, add the onions to the pan and place the peppers directly on the grates over direct medium heat with the lid clos
- Some Assembly Required: Lay the tortilla on a work surface. Sprinkle the tortilla with cheese, 1/2 cup of grilled onions, 1 cup of yellow and red pepper slices and 1 cup of diced turkey. Add the second tortilla on top to make a quesadilla. Grill the quesadilla over direct medium heat, with the lid closed until well marked and the cheese is melted, 4 to 6 minutes, turning once. Remove the quesadilla from the grill. Allow to cool for a minute and cut tortilla into 4 even pieces and serve warm. Repeat!
