SMOKY CAJUN WINGS W CAJUN SWEET BBQ SAUCE
These are now my all time favorite. Sweet smoky with a Cajun flare. You are going to need tons of napkins or even better wet wipes. These are delicious. You may want to double or triple the recipe because these don't last long. You could also make these with chicken legs or thighs.

Steps:
- Combine tomatoes, onion, and garlic in a large stock pot and bring to a boil; lower heat and simmer 30 minutes or until vegetables are very soft. Working in batches, puree vegetables until smooth with Harvest Pro food mill or in the bowl of a food processor.
- Return tomato mixture to the pot and add remaining ingredients, bring to a boil over high heat, stirring frequently. Lower heat and simmer until thickened and darker in color, about 1½-2 hours, stirring occasionally to prevent scorching.
- Prepare boiling water canner while sauce is cooking. Heat jars in simmering water until ready to use. Do not boil. Wash lids in warm soapy water and set aside with bands.
- Ladle hot BBQ sauce into a hot jar leaving a ½-inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar and apply band; adjust to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled.
- Process jars for 20 minutes, adjusting for altitude. Turn off heat, remove lid, let jars stand 5 minutes. Remove jars and cool 12-24 hours. Check lids for seal. They should not flex when center is pressed.
- Enjoy!

CAJUN SPICE CHICKEN WINGS WITH REMOULADE SAUCE
Hot, crispy wings dipped in a cold, creamy sauce provide a great contrast in texture, flavor, and temperature. This New Orleans-inspired version of Buffalo-spiced chicken wings uses a technique that does not include a deep fryer so it's easier and less messy. By using baking powder in the spice rub, these wings stay super crispy!

Steps:
- Prepare spice rub by combining baking powder, salt, garlic powder, and onion powder, cumin, paprika, cayenne, black pepper, oregano, and thyme in a small bowl. Mix until thoroughly combined.
- Place wings in a large bowl and toss in 3 tablespoons spice rub. Toss wings with tongs until thoroughly and evenly coated. Transfer to a baking rack set over a parchment-lined sheet pan. Sprinkle a little more spice rub over each wing and let sit for 15 minutes.
- Preheat the oven to 425 degrees F (220 degrees C).
- Prepare remoulade sauce by crushing capers in a mixing bowl with the back of a fork. Add mayonnaise, Dijon, Worcestershire sauce, hot sauce, cayenne, paprika, garlic, green onion, parsley, and lemon juice; whisk to combine. Taste and add salt if needed. Cover and refrigerate until needed.
- Bake wings in the center of the preheated oven for 20 minutes. Flip and continue to bake until beautifully browned, no longer pink at the bone, and the juices run clear, 20 to 25 minutes longer. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
- Serve with remoulade sauce.

SWEET AND SMOKY BARBEQUE SAUCE
Use this toward the end of cooking as you would for any BBQ meat such as pork, ribs, or chicken. I have even used it on beef and hamburgers, sausages, hot dogs, or anything you want, for the most part. I use it on everything from ribs to roasts to hamburgers to hot dogs. Even goes good with a good old classic grilled cheese sandwich. This is a great all-round BBQ sauce. Use right away or cool to room temperature, transfer to jars or containers, and refrigerate. The sauce will keep for several months in the fridge.

SWEET & SPICY CAJUN WINGS
You can adjust the spice to your liking by adding more or less Cajun seasoning. The honey gives it a nice sweetness to off set the heat.

Steps:
- 1. Place olive oil in large skillet. Season chicken with salt and place in olive oil and sear to get the skin brown and crispy. Remove chicken and transfer to a baking pan with a rack or set aside to cook on grill.
- 2. In the same skillet you cooked the chicken deglaze with 1/4 cup Bourbon Whiskey scraping up bits. Add the shallots and garlic and cook until softened.
- 3. Mix together the remaining ingredients except butter with the other 1/4 cup Bourbon. Add to pan and cook until thickened a bit.
- 4. Slowly add the butter one pat at a time whisking constantly and let each pat melt before adding another. Keep whisking to incorporate all the butter.
- 5. Brush the chicken with the sauce and place in preheated 400 degree oven. Continue to baste with sauce turning the chicken until done about 20 minutes.
- 6. Tip: This recipe is best when the chicken is cooked on a rack or grill because of the richness of the sauce. It tends to be too oily if the chicken sets in its own juices while it bakes.

Steps:
- 1. Pre-heat oven to 425-F. Put the wings in a large bowl & drizzle the liquid smoke seasoning on them and mix well.
- 2. In a separate bowl, mix all of the dry spices together. Pour them over the wings and mix well.
- 3. Place the wings onto wire racks with cookie sheets underneath to catch any drippings. (I line my cookie sheets with foil for easy clean up). After 30 minutes, turn the wings over and bake for about 10-15 minutes more or until they are slightly crispy and golden brown. Serve hot with ranch or blue cheese dressing. Enjoy.
