AVOCADO TOAST WITH CREAMY SOFT SCRAMBLED EGG

Avocado Toast with Creamy Soft Scrambled Egg image

Steps:

  • Coarsely mash the avocados in a bowl with the lemon zest and juice, 1/4 teaspoon salt and pepper to taste. Spread the mash evenly onto the toasts.
  • Melt the butter in a medium nonstick skillet over medium-low heat. Add the cream cheese, eggs and 1/4 teaspoon salt and cook, stirring constantly with a rubber spatula, until the mixture is just set with small, creamy curds, about 5 minutes. Spoon the eggs onto the toasts and top with the radishes and chives. Sprinkle with salt.

2 large avocados
1/2 teaspoon grated lemon zest plus 1 teaspoon lemon juice
Kosher salt and freshly ground black pepper
4 slices multigrain or sourdough bread, toasted
1 tablespoon unsalted butter
2 ounces cream cheese, cut into bits
4 large eggs, beaten
2 radishes, very thinly sliced
1 tablespoon finely chopped chives

Steps:

  • Wash the radishes and cut them into fairly thin slices. Cut the scallions into the thinnest rounds possible, including a good deal of the green tops. Spread 1 teaspoon butter on each bread half. Top each slice of bread with two long rows of radish slices. Scatter the frizzle of cut scallions over the radishes, dividing them equally among the 12 smorrebrod. Top with freshly ground black pepper.;

Steps:

  • Toss the radishes in a bowl with the vinegar, sugar and a pinch of salt. In a separate bowl, mash the avocado with the lime juice, chilli flakes and some seasoning. Toast the bread, then top each slice with a little avocado, half an egg, some pickled radishes and a few more chilli flakes, if you like.

Steps:

  • Take 5-6 radishes still with their tops on, and slice the leaves and the radishes thinly, keeping both separate. In a small bowl, mix together 2 tbsp quark, 1 tbsp grated gruyère and the radish leaves, then season well. Spread 2 slices of toasted rye bread with butter, then spread the yogurt mixture on top. Garnish with the radish slices, a good grating of black pepper, a spritz of lemon juice and a few drops of olive oil.
