STRAWBERRIES AND JALAPENOS
Steps:
- Toss strawberries in sugar and refrigerate, covered, for at least 30 minutes but preferably overnight.
- Soak jalapenos in 1 cup water with 2 tablespoons lemon juice for 30 minutes (15 minutes if you want more bite); drain.
- Add jalapenos and remaining 2 tablespoons lemon juice or the optional orange liqueur to the strawberries, toss and let stand 15 minutes.
- Toss in lemon zest right before serving. Spoon over ice cream and serve.
- Keep refrigerated in an airtight container (but allow to come closer to room temperature before serving).
JALAPENO STRAWBERRY JAM
This is a favorite in our family at Christmas. This jam is not spicy, but can be made to be spicy by adding more peppers or a few habanero peppers. The flavor of the sweet strawberries combined with the flavor of the peppers gives this jam a wonderful flavor dimension. The strawberries may be frozen (thawed and crushed) and the peppers may be canned (drained and chopped).

Steps:
- Place the crushed strawberries, minced jalapeno pepper, lemon juice, and pectin into a large saucepan, and bring to a boil over high heat. Once simmering, stir in the sugar until dissolved, return to a boil, and cook for 1 minute.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart. Allow to cool overnight Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

CRANBERRY JALAPENO SAUCE
Not just for a turkey condiment. Use on cheese quesadillas or grilled sandwiches. Best if made the day before.

Steps:
- In a medium saucepan, mix water and sugar. Bring to a boil.
- Add berries. Bring to a boil and simmer for 10, stirring only occasionally. Pour into a bowl to cool.
- Add the green onions, cilantro, jalapenos, cumin and lime juice to the berry mixture. Stir to incorporate. Refrigerate until ready to use.

CARNE ASADA WITH TOMATO JALAPENO SAUCE
Ever had El Torito's Carne Asada? Well I love it and get it every time I go. There's just something about the sauce they pour on top that puts it *over* the top. So I finally decided to try my best at recreating it. How did I do? The key is the white vinegar. Oh and if you do not like your food very spicy, then please remember to remove the seeds and membrane from inside the peppers.

- Place all of the marinade ingredients, except for the steak, into a food processor and buzz them up. Then pour the mixture over the steak in a non-reactive container and marinade for about 15 minutes. Any longer and the acid from the lime juice will cook your steak for you!
- Meanwhile prepare the sauce by buzzing the fire roasted tomatoes, jalepeno, garlic, vinegar, sugar, cilantro and salt & pepper in your food processor until you have a fine consistency.
- Place this mixture in a pot over medium heat and cook for about 20 minutes, stiring constantly to make sure the tomatoes don't burn.
- Grill the steak over high heat to your desired doneness (skirt steak is exceedingly thin so 2 minutes a side on my gas grill was about medium rare). It all depends on your heat, so since you're the cook, you decide!
- Top the steak with the sauce and serve.
- Optionally, to do it exactly like they do at El Torito, go ahead and roll the jack cheese inside a corn tortilla (which has been softened in a little bit of hot oil for 5 seconds), which you have baked just until the cheese melts. Place this enchilada on top of the steak before you spoon on the sauce.

One of my favorite things in the summer. It's like a meal and dessert in one. The combination of jalapeno peppers and fruit isn't for everyone, but if you're the adventurous type, then this might just be the recipe for you.

Steps:
- Put everything except for mint leaves into blender. Blend until smooth.
- Taste, if you like it really tangy, you might want to add a little more balsamic vinegar.
- Pour into bowls and garnish with mint leaves on top. Serve immediately.
- Variation: Use 1 c frozen strawberries + 1 c frozen green grapes instead of 2 c frozen strawberries.
