SOUTH BEACH DIET OPEN-FACED CANADIAN BACON BAGEL
This is a Phase 2 dish. Topping the Canadian bacon with the fruit and shredded cheddar puts a tasty twist on this open-faced sandwich. SUBSTITUTE: Prepare as directed, substituting 1/8 of a thinly sliced, peeled medium peach for the apple slices.

WINSTON (STYLE) BAGEL
If you have spent a late night at SIU Carbondale, you have probably paid a visit to Winston the Bagel Man. He is a fabulous fellow with a bagel cart who grills up (YES, GRILLS UP) the most wonderful bagel creations you can imagine. This is my humble version of his masterpiece. . .it's not as good as the original but it is a tribute to Winston and my college years joyfully spent.

- Split your bagel in half and grill (or toast in the toaster if you must) til warm and light brown.
- Slather each side with a little butter, then cream cheese, then 10 raisins on each bagel, then sunflower seeds. Top cucumber, sprouts, bacon bits, then apple and sprinkle some cinnamon on top.
- As an adult, I now eat my bagel open faced, however the original is served sandwich style.
- NOTE: In true Winston fashion, I must tell you that he would make your bagel with any combo of ingredients you wished. Sometimes I added bacon bits and sweet onion to my combo above. . .depended on how many drinks I had that night LOL. He also offers garlic powder, but that never fit with my chosen combo.

- Heat contact grill or panini maker for 5 minutes. Spread 1 teaspoon mustard on cut sides of each bagel. On bagel bottoms, place 1 slice Canadian bacon, 1 slice tomato, 1/4 cup spinach and 1 slice cheese. Cover with bagel tops.
- Place sandwiches on grill. Close grill, pressing down lightly; cook 2 to 3 minutes or until sandwiches are hot and cheese is melted. Serve immediately.

Steps:
- In a medium saucepan, heat olive oil over medium heat.
- Add scallions, celery, garlic, cumin, cayenne, salt, and pepper, Cook, stirring occasinally until vegetables soften.
- Add cans of black beans, diced tomatoes, and chicken broth. Bring to a simmer and cook for 10 minutes.
- Transfer 2 cups of soup to a blender and process until smooth. Return soup to pan and stir to combine.
- Return to a simmer and cook for 10 minutes longer. season with lime juice, and adjust seasonings.
- Serve with hot pepper sauce and sliced scallions on the side (not in ingredients).
CANADIAN BACON, BAGEL, AND GREEN PEPPER SANDWICHES
I think my mom got this from a Pilsbury cookbook, but my sis and I both remember it fondly and make it for our appreciative boyfriends. Very easy to modify the spread, meat or vegetable to get a different taste (ex: roasted red pepper, feta and turkey).

Steps:
- Preheat oven to about 425 degrees.
- Butter each split bagel.
- Place bagels butter side up on cookie sheet
- Let warm up/toast for 5 minutes or so.
- Remove sheet from oven once toasty.
- Put cheese slice/portion on one side of each bagel.
- Put green pepper ring on top.
- Put mushroom slices/pieces inside ring.
- Sprinkle with paprika.
- On other side of bagel, put Canadian bacon.
- Increase oven heat to broil.
- Place sheet under broiler and watch carefully.
- Once cheese browns and/or ham curls, remove.
- Place one side on top of the other, let rest and enjoy.

Just starting the south beach diet and I wanted something that traveled well for breakfast. This is a quick and easy recipe. Very yummy too. It comes out in a neat little package that travels well...but make sure you cover the item when reheating in the microwave.

- Preheat oven to 350.
- In an x-large muffin pan, spray each muffin cup with Olive oil cooking spray.
- Place one piece of Canadian bacon in the bottom of each muffin cup
- Crack an egg over the piece of bacon in each muffin cup. Sprinkle the Italian seasoning and pepper over the egg in each muffin cup.
- Sprinkle the cheese over the egg in each muffin cup.
- Place in preheated oven and cook for 15 minutes or until the cheese is slightly brown on top.
