FAMOUS 21 CLUB'S STEAK DIANE
I have several recipes for Steak Diane, and this one is from the 21 Club. Cooks Notes: Use the best steak you can afford, from a good butcher.

Steps:
- Trim all outside fat off the steak. The steak should now weigh about 12 ounces.
- Cut the steak in half horizontally, creating 2 6-ounce steaks.
- Pound the steaks lightly to flatten them to 1/4-inch thick. Season them on both sides with salt and freshly ground black pepper.
- Heat a 12-inch skillet until a drop of water dances on the surface.
- Add 1 tablespoon of the butter. As soon as the foam subsides, add the seasoned meat.
- Cook on each side for 1 minute. Remove to a plate. Immediately adjust the heat under the pan to low.
- Add the second tablespoon of butter and the shallots. Sauté the shallots for 1 minute.
- Increase the heat to high. Add 3 tablespoons cognac and flambé, if desired.
- Add the wine, and with a wooden spoon, scrape up any browning in the pan (deg laze the pan). Stir in the mustard and A-1 sauce.
- Cook for about a minute, or until the liquid is reduced to a syrup. Add the broth and continue to boil for about a minute, until reduced to a few tablespoons.
- Add the cream and stir well to incorporate. Boil a few seconds.
- Taste for seasoning and add freshly ground pepper to taste. Add the remaining cognac and ignite. When the flames die down, stir in the chives, taste for salt and pepper, and adjust if necessary.
- Add the reserved steaks and their juices (that have accumulated on the plate) to the simmering sauce.
- Turn the steaks in the sauce a couple of times, as the sauce reduces a little more. Place the steaks on individual plates.
- Divide the sauce on the steaks. Serve with mashed potatoes or brown rice, and some bread to mop up the sauce.

- 1. Grill steaks seasoned with salt and coarse ground black pepper to your preference, and serve with the Steak Diane sauce poured over the top of the steak.
- 2. PREPARE THE STEAK DIANE SAUCE: Saute the mushrooms, green onions, lemon juice, worcestershire sauce, dry mustard, salt and parsley in the 1/2 cup butter in a small skillet. Saute about 10 minutes, and immediately pour over grilled steaks before serving. Enjoy!

- Sprinkle steaks with pepper and salt. In a large skillet, heat 2 tablespoons butter over medium heat. Add green onion and mustard; cook 1 minute. Add steaks; cook 2-5 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium 140°; medium-well, 145°)., Remove steaks to a serving platter and keep warm. In same skillet, add lemon juice, Worcestershire sauce and remaining butter; cook and stir 2 minutes or until thickened. Add parsley and chives. Serve with steaks.

STEAK DIANE

- Flatten the steaks with a meat mallet so they are about 1 1/2 inches thick. Season the steaks with salt and pepper on both sides.
- Heat the olive oil and butter in a large sauté pan over medium-high heat. When the oil is hot and the butter has melted, add the steaks and sear until well browned, 3 to 4 minutes per side. Set the steaks aside on a plate.
- To the same pan, add the garlic and shallot and cook, scraping the bottom of the pan to loosen any of the flavorsome steak residue into the mixture, for about 1 minute. Remove the pan from the heat and carefully add the brandy. (If the pan ignites, stand back and allow the flame to disappear, which it will in a few seconds.) Return the pan to the heat and bring to a simmer, scraping the bottom of the pan again. Simmer until the brandy is almost totally reduced, about 2 minutes. Add the broth, cream, mustard and Worcestershire sauce and stir to combine, then cook for a minute to thicken.
- Plate up the steak and pour over the sauce. Garnish with the parsley and chives and serve immediately.

- Place each 3 oz piece of tenderloin between wax paper and pound with a mallet until the steak is about 1/2 inch thick.
- Pat meat with paper towel to dry; season with salt and pepper.
- In a large skillet, melt 3 Tbsp of the margarine and cook meat on medium to high heat for 2 minutes on each side.
- Remove the meat from skillet onto a plate and keep warm.
- In the same skillet, melt 2 Tbsp of margarine and saute the mushrooms, onion and garlic until veggies are semi-soft.
- Add the mustard powder and Worcestershire, mixing well.
- Add the meat to skillet and cook until meat is done to your liking.
- Remove the meat and keep warm; combine lemon juice and parsley in the skillet and cook until warmed.
- Pour sauce over the meat and garnish with chives; serve.
STEAK DIANE
This comes from a Family Circle Cookbook. I have made a few changes. It works well if you add mushrooms or dijon mustard to the sauce...Serve with potatoes and salad. This is one of my darling's favourites.. You should have all the sauce ingredients ready before you start.

- Trim meat off fat, and pound to even thinness.
- Melt half of the butter in a frypan over a medium heat.
- Add steak, and cook turning once only to desired doneness.
- Add extra butter to pan.
- Cook onions and garlic over low heat, until softened, around 3 mins.
- Add Worcester sauce and brandy, scraping up black bits from steak.
- Add cream, stir through and simmer for five mins.
- Do not boil.
- Return steaks to pan and coat with sauce.
- Serve immediately.
- Garnish with chopped parsley.

This was my ex-husbands favorite! Anytime his birthday or something special came up, he wanted this. It is soooo quick and easy to make, but guests think I've slaved. It is important to serve this immediately. I don't think it took me 15 minutes for prep time, because I used the crushed garlic in the jar.

- Cook and stir mushrooms, onions, garlic, salt, lemon juice and Worcestershire sauce in 1/4 cup of butter until mushrooms are tender.
- Stir in parsley; keep sauce warm.
- Melt 2 tblsp.butter in skillet; turning once, cook tenderloin slices over medium-high heat to medium doneness, about 3 to 4 minutes on each side

STEAK DIANE
This is a wonderful recipe that not only brings out the full Steak Diane flavors, it also has pleanty of sauce to smother the steak in. Steak Diane should be cooked no more than medium rare to bring out the best of the steak and sauce. For the mushroom lovers out there, a nice option to this recipe is to add 1/2 can (small) mushrooms.

- Salt and pepper both sides of the steaks.
- Melt 1 tablespoon of butter in a large heavy skillet. Once up to temperature add mustard and shallots and sauté over medium heat for 1 minute.
- Melt 2 tablespoons butter in the skillet and cook the steaks over high heat for 1 minute to seal the steaks, turning only once. Cook a further 1-4 minutes on each side depending how you like your steak cooked (2 minutes for Medium Rare) Remove meat to serving platter and keep warm.
- To the pan drippings add 1 tablespoon butter, lemon juice, Worcestershire sauce and chives; cook for 1 minute. At this time if you so wish canned mushrooms can be added. A option for a splash of brandy at this time is used in many recipes, however I find that it really does not add to the flavor.
- Add steaks back to the pan for 1 minute to add heat to the steaks.
- Serve steaks with the sauce on top and sprinkle the chopped parsley over the top.
- Serve immediately.
