CRAZY GOOD SOUTHERN BAKED HAM

This is a mash up of two recipes with coffee added to give it a kick. It doesn't taste like coffee but I think it gives it a lift.

SOUTHERN BAKED HAM

This is the ham I use for the big holidays. Everyone looks foreword to it. My secret is that it's so easy. I pour the extra sauce in a small dish and use it for the ham--or my favorite is to pour it on homemade mashed potatoes. It's a VERY sweet sauce!

  • Preheat the oven to 350 degrees F. Put oven rack in the middle of the oven.
  • In a small bowl, mix together the Dijon mustard, brown sugar, and thyme.
  • Put the ham in a large roasting pan, fat side up. Rub the ham with mustard glaze. Pour the pineapple juice into the bottom of the pan. Put the ham in the oven and bake for 2 hours, brushing every 20 minutes with the pineapple juice. Remove the ham from the oven.

  • Using toothpicks, decoratively adhere the pineapple rings around the ham and put a cherry in the center of the pineapple ring. Sprinkle the pineapple rings lightly with brown sugar. Return to the oven, uncovered, and bake until the pineapples turn a light golden brown. Remove from the oven to a serving platter and let rest for 15 minutes before slicing.

2 teaspoons chopped fresh thyme leaves
1 (14-pound) cooked and smoked cured ham, shank end

BAKED HAM WITH PINEAPPLE

I first learned the technique for cooking pineapple ham for a themed dinner my husband and I hosted. Since it was widely known as the symbol of hospitality, pineapple was the star ingredient on our menu and on this lovely baked ham. -JoAnn Fox, Johnson City, Tennessee

  • Line a large pan with a lip around it with aluminum foil. Place ham in center of foil. In small bowl, stir together brown sugar, coke, and mustard to make your glaze. Brush half of glaze over ham. Wrap entire ham well in foil. Place in 350 degree oven for 2 -1/2 hours.
  • Remove ham from oven and peel back the foil but don't move the ham. Brush remaining glaze over ham and return to oven, uncovered, for another thirty minutes or until lightly browned. Allow to sit at room temperature for about ten minutes or so before cutting. If you need to serve it later you can cover it with foil to keep it warm and let it sit on your stovetop. I suggest cutting it within half an hour of removing it from the oven because that is about as long as you'll be able to stand waiting once you smell it.
