SOUTHERN SMOTHERED PORK CHOPS IN BROWN GRAVY
Southern comfort food at its easiest. Pork chops smothered in onion, garlic, baby bella mushrooms, and a brown gravy sauce. Tastes great as gravy on mashed potatoes too!

Steps:
- Melt butter in a 3-quart saucepan over medium-low heat. Cook onion and garlic in the butter, stirring occasionally, until is browned, 7 to 10 minutes. Remove onion and garlic and set aside.
- Stir flour slowly into butter. Cook over low heat, stirring constantly, until flour is deep brown, 7 to 10 minutes. Remove from heat. Gradually stir in broth. Add onion, garlic, mushrooms, and parsley. Bring to a boil, stirring constantly. Remove from heat.
- Coat a large skillet with cooking spray and heat over medium-high heat. Season pork chops with salt and pepper and brown in the hot pan, 5 to 7 minutes per side. Add gravy mixture from the saucepan. Cover and cook over low heat until tender and no longer pink in the centers, 30 to 40 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

PORK CHOPS - SOUTHERN STYLE
Simple, quick and tasty. Something I threw together with the 'scraps' in my Fridge and surprised me with how great it tasted. Feel free to remove as much 'fat' from the pan as you need to... the more you leave, the better it tastes! Great with mashed potatoes!

Steps:
- In 12" skillet, cook bacon on med hi heat. Remove bacon from skillet, but leave bacon drippings.
- Add 1 TBSP butter and diced onion. When transparent, remove from skillet.
- Reduce heat to medium, lightly salt and pepper both sides of pork chops and place in skillet. Brown both sides (approx 2-4 minutes each).
- Chop up bacon, and add both bacon and cooked onion to skillet.
- Add 3/4 cup water (add more if you want more gravy), 1 TBSP butter, cover and simmer until cooked (5-10 minutes - but can simmer for up to 45 minutes easily).
- Just before serving, mix 2 TBSP cornstarch with cool tap water (approx 1/4 cup).
- Place pork chops on plates, add corn starch/water mixture to gravy/drippings in skillet and bring to quick boil stirring frequently to form thick gravy.

This recipe is my nanny's passed to my momma and then to me. I would just watch them in the kitchen as a child. Nothing was really ever measured, just a little of this and that.

- Put the flour, salt and pepper in a paper bag or ziplock bag.
- Put a couple of pork chops in and shake the bag well set aside.
- Heat the oil in a skillet when the oil is hot put the chops in and fry about 5 to 10 minutes on each side.
- Turn chops every 2 to 3 minutes.
- Place on paper towels to drain.
- I put them in a warm oven until they are all done.

- In a skillet, brown pork chops in 1-2 Tb. vegetable oil, 2-3 minutes per side. DO NOT cook through.
- Place in a large Dutch oven.
- Mix together sauce ingredients. Personally, I tend to double the sauce (I LOVE SAUCE!) and put in more or less of the ingredients to your own taste (i.e. thicker, thinner, tangier, sweeter -- ).
- Pour 1/2 of sauce over pork chops.
- Add vegetables on top.
- Pour remaining sauce over the vegetables.
- Bake, covered, in a preheated 375 degree oven for 1 hour to 1 hour and 15 minutes, or until vegetables are tender.

- In a medium mixing bowl, combine flour, salt, pepper, paprika, garlic powder, and onion.
- Dredge pork chops in flour mixture and saute in Olive Oil over medium to high heat until golden on both sides, about 5 min per side.
- Remove from pan.
- In same pan add butter, chopped garlic and sliced mushrooms and cook about 5 min until softened.
- Add chicken stock, cream of mushroom soup and stir.
- Nestle the pork chops back into the pan, cover and cook over low heat about an hour until sauce is thick and pork is fall apart tender.

- Season the 8 pork chops with the seasoned salt and ground pepper; flour the pork chops on both sides.
- In large iron skillet, heat up shorting until very hot. Reduce heat to medium. Place prepared pork chops into skillet and fry until a dark golden brown on both sides.
- Drain all grease from skillet except one tablespoon. Add 4 cups of warm water; cover with lid and simmer until a thick gravy forms. Let it sit for 10 minutes.
