SOUTHWEST TURKEY BURGERS

Most of the turkey burgers that I have had were overcooked and flavorless. This recipe was inspired by some friends of ours that put a Southwest spin on the burger. With a few tweaks these Southwest turkey burgers have become a staple recipe in our house. The patty is flavorful and plays well with some creamy guacamole and spicy salsa.

Steps:

  • Combine turkey, eggs, onion, bread crumbs, 2 tablespoons oil, jalapenos, Worcestershire, mustard, paprika, chili powder, and cumin in a bowl. Form into 8 patties. Season lightly with salt and pepper.
  • Heat remaining olive oil in a saute pan over medium to medium-high heat. Place patties in the hot pan and cover partially to help retain moisture, but not so much that the patties braise (boil). Cook until browned and halfway cooked through, about 4 minutes. Continue to cook until no longer pink and an instant-read thermometer inserted into the center reads 165 degrees F (74 degrees C), about 3 minutes more.
  • Serve patties on toasted buns with guacamole and salsa.

SOUTHWEST BURGERS

From juicy burgers to savoury chicken breasts, it seems like everything just tastes better grilled. Meats including burgers, steak, hot dogs, and chicken top the list of the most popular foods prepared using a grill. With the calorie-heavy holiday season coming up, men and women alike are focused on cutting calories, and grilling is a great way to do just that. Once only a summertime treat, grilling has become a year-round activity, with many taking grilling indoors with grills such as the George Foreman. And while burgers, steak and hot dogs reign supreme as the kings of the grill, many home cooks are getting creative with their culinary grilling explorations and are adding fruit and desserts to their repertoire because it's a great way to add flavour, and not fat. • In a large bowl, combine the bread, milk, salt, pepper, cumin, coriander, chili powder, smoked paprika, garlic, and Worcestershire sauce. Using a fork, mash into a paste.
  • Add the ground beef, jalapeno, scallions, and cheese. Using your hands, mix until well combined. Shape the beef mixture into 8 patties slightly wider than the diameter of the buns. Form a slight depression in the center of each patty to prevent the burgers from puffing up on the grill. Refrigerate until ready to cook.
  • Preheat the grill to medium-high heat and oil the grates. Brush the cut sides of the buns lightly with oil and set aside.
  • Grill the burgers, covered, until nicely browned on the first side, about 3 minutes. Flip burgers and add cheese (if desired); continue cooking for about 2 minutes more for medium rare. Remove the patties from the grill and let rest on a plate. Add the buns to the grill, oiled side down, and grill for about 1 minute, or until lightly toasted with grill marks. Remove from the grill. Mound the arugula (if using) on the bottom halves of the buns. Top each bottom half with a patty, followed by a generous amount of the Roasted Tomato Peach Jam (or ketchup or salsa) and the upper half of the bun. Serve hot.
