SOUTHWEST TURKEY BURGERS
Most of the turkey burgers that I have had were overcooked and flavorless. This recipe was inspired by some friends of ours that put a Southwest spin on the burger. With a few tweaks these Southwest turkey burgers have become a staple recipe in our house. The patty is flavorful and plays well with some creamy guacamole and spicy salsa.

Steps:
- Combine turkey, eggs, onion, bread crumbs, 2 tablespoons oil, jalapenos, Worcestershire, mustard, paprika, chili powder, and cumin in a bowl. Form into 8 patties. Season lightly with salt and pepper.
- Heat remaining olive oil in a saute pan over medium to medium-high heat. Place patties in the hot pan and cover partially to help retain moisture, but not so much that the patties braise (boil). Cook until browned and halfway cooked through, about 4 minutes. Continue to cook until no longer pink and an instant-read thermometer inserted into the center reads 165 degrees F (74 degrees C), about 3 minutes more.
- Serve patties on toasted buns with guacamole and salsa.

- In a large bowl, combine the first six ingredients. Crumble beef and sausage over mixture; mix well. Shape into eight patties. , Grill, covered, over medium heat for 5 minutes on each side or until a thermometer reads 160° and juices run clear. Top each burger with a cheese slice. , Grill 1-2 minutes longer or until cheese begins to melt. Serve on buns with the lettuce, tomato, avocado and mayonnaise or mustard if desired.

- Heat gas or charcoal grill. In medium bowl, mix beef, onion and chiles. Shape mixture into 8 thin patties. Top each of 4 patties with 2 slices cheese. Place remaining beef patties on top; pinch edges to seal securely.
- Place patties on grill over medium heat. Cover grill; cook 14 to 16 minutes, turning once, until burgers are slightly firm when pressed in center. Add rolls, cut sides down, for last 4 minutes of grilling or until toasted. Serve patties on rolls with taco sauce.

- In a bowl, combine all ingredients, except salsa. Toss to blend.

- In a small bowl, combine chilies, cheese, butter and garlic. Blend well.
- Divide ground beef into four, 3/4 cup pieces. Place 1 piece on cutting board; divide in half. Flatten each half into thin patty about 4 inches wide. Season each half with salt and black pepper.
- Place 2 tablespoons cheese mixture in center of one patty; cover with other patty. Pinch edges together to seal. Shape burger until round and slightly flattened. Season again with salt and black pepper, if desired.
- Repeat with remaining ground beef and cheese mixture.
- Spray grill with nonstick cooking spray. Preheat grill to medium-hot.
- Grill burgers about 6 minutes per side or until desired doneness. Do not flatten burgers with spatula.

- In a large bowl, combine the bread, milk, salt, pepper, cumin, coriander, chili powder, smoked paprika, garlic, and Worcestershire sauce. Using a fork, mash into a paste.
