Southwest Fusilli With Leftover Turkey Recipes

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a mixing bowl, combine the chicken soup, mushroom soup, chile peppers and sour cream.
- Line the bottom of a 9x13 inch baking pan with corn tortillas. Follow with a layer of turkey. Pour soup mixture over turkey, sprinkle with 1/2 of the cheese. Repeat layers and top with cheddar cheese. Bake for 30 to 45 minutes or until cheese is browned and bubbly.

I made this up when I had too much leftover turkey in the freezer and have loved it ever since. Sometimes I add kale or spinach but not often but it is good that way. This is also really good as a cold salad the next day too.

Steps:
- Sauté peppers, mushrooms, garlic and onion in olive oil until tender, about 10 min on medium heat.
- If adding greens add and cover for 5 min more.
- Add salsa, tomatoes and Italian seasoning, mix well, add turkey, salt and pepper and stir until warm.
- Mix with pasta and Parmesan and serve with extra cheese if you wish.

- Remove crusts from bread and transfer to a mini prep food processor. Add the butter and cilantro and pulse until breadcrumbs are finely chopped.
- Sprinkle the breadcrumbs over the casserole and bake for 20 minutes or until warmed and bubbly. Serve.
