Bloody Mary Dip image

Steps:

  • Put the mascarpone in the bowl of a food processor fitted with a metal blade and pulse until smooth. Scrape down the sides of the bowl with a rubber spatula and add the Worcestershire sauce, hot sauce, tomato paste, ketchup, horseradish, lemon zest and juice, salt and celery seeds. Process, scraping down the sides of the bowl as needed, until the dip is smooth, about 1 minute.
  • Transfer the dip to a serving bowl and serve with celery sticks for dipping.

8 ounces mascarpone, at room temperature
3/4 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce, such as Tabasco
2 tablespoons tomato paste
1 tablespoon ketchup
1 tablespoon prepared horseradish, liquid squeezed out
Zest of 1 lemon plus 1 teaspoon juice
1/4 teaspoon kosher salt
1/8 teaspoon celery seeds
1 head celery, cut into 4-inch sticks

Spam Fries & Kale Chips with Bloody Mary Dip Recipe - (4/5) image

Steps:

  • 1. Preheat oven to 150C. Remove kale leaves from stem and cut them into bite-size pieces. Wash and spin the leaves thoroughly dry in a salad spinner. Lay individual kale leaves onto a baking tray lined with parchment paper. Drizzle and coat them with a little olive oil. Season with salt, black pepper and cayenne pepper to taste. Bake for 20 to 25 minutes, rotating the pan halfway till kale is crisp and lightly browned. Allow kale chips to cool before transferring it to a serving board or plate. 2. For Bloody Mary dip, combine all ingredients for the dipping sauce. Stir well and transfer to a sauce dish. 3. In a saucepan, heat oil 1 inch deep to 175C. Working in batches, carefully fry spam fries for about 4 to 5 minutes till crispy and browned, then place on kitchen towel to drain off excess oil. Serve Spam fries and kale chips with bloody mary dip. Pop open a bottle of beer, sit back and enjoy!

For Spam fries:
1 can Spam Lite, cut into 1/2″ strips
Vegetable oil for frying
For kale chips:
1/2 branch kale
2 tbsp olive oil
Salt & black pepper, to taste
Pinch cayenne pepper (optional)
For Bloody Mary dip:
1/4 cup ketchup
1 tsp horseradish cream
Dash Worcestershire sauce
Dash lemon juice
Dash Tabasco sauce
11/2 tsp Vodka
Pinch salt & black pepper

Spicy Kale Chips and Miso Dip image

Steps:

  • For the kale chips: Preheat the oven to 350 degrees F. Line 2 baking sheets with aluminum foil.
  • Scatter the kale over the baking sheets. Drizzle with the tamari and sesame oil. Sprinkle with the nutritional yeast, garlic powder and chili powder.
  • Bake until the kale is crisped, about 25 minutes, rotating the baking sheets halfway through baking. Remove from the oven and let cool; the chips will crisp up more as they cool.
  • Meanwhile, whisk together the mayonnaise and miso in a small bowl. Stir in the scallions. Serve with the kale chips. (The dip can be refrigerated in an airtight container for up to 1 week.)

2 tablespoons low-sodium tamari soy sauce
2 tablespoons toasted sesame oil
1/4 cups nutritional yeast
2 teaspoons garlic powder, plus more if desired

Steps:

  • Process garlic, paprika, and salt in a food processor until smooth. Add mayonnaise, sriracha sauce, and ketchup; process until sauce is well-combined. Transfer sauce to a bowl, cover the bowl with plastic wrap, and refrigerate until chilled.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Rinse luncheon meat 'fries' with cool water and pat dry.
  • Working in batches, cook 'fries' in preheated oil until browned and crispy on the outside and still moist on the inside, 4 to 6 minutes. Remove to a paper towel-lined plate. Transfer 'fries' to a plate and serve with chilled dipping sauce.

Steps:

  • 1. preheat oven to 300 2. remove stems from raw kale. 3. If you must wash, make sure you dry as much as possible. 4. mix seasonings together, and figure out how to divide the portions up. 2.5lb roughly spreads over 5 five baking sheets 5. mix and try and evenly coat (you won't be able to but stir regardless) 6. Spread but do not crowd the pan. 7. Depending on your oven (convention or standard) load up as many trays as it takes. The drying process will very depending on oven. It took 20 minutes to do mine but check after 15 minutes. You will be drying 70% the kale moisture, be watchful it could burn if left unattended. 8.when you take the trays out let sit for 3 minutes. Avoid adding wet sauces (if at all), use spritzer type add ons if you have to. and I'd suggest you skip all the spices and just try it naked.
