- Place beans in a steamer basket; place in a saucepan over 1 in. of water. Bring to a boil; cover and steam for 7-8 minutes or until crisp-tender. In a small bowl, combine the butter and seasonings. Drain beans; add butter mixture and toss to coat.

Steps:
- Heat oil in a large saucepan over medium heat. Add garlic; cook and stir until fragrant, about 2 minutes. Reduce heat if garlic begins to brown. Add green beans, then continue to cook and stir until bright green but not quite tender, about 4 minutes.
- Mix in tomatoes, lemon juice and pine nuts, and season with chives, bay leaf, salt and pepper. Bring to a boil, stirring often. Reduce heat and simmer gently uncovered for 25 to 30 minutes. Remove and discard bay leaf before serving.

SOUTHERN STYLE SEASONED GREEN BEANS (FROM CANNED)
A lot of folks simply open a couple of cans of green beans, heat, add a bit of butter...and wonder why no one eats them! This simple little "tweak" turns them into a delicious, satisfying side that'll change the way you think of canned green beans.

- Cook the bacon in a heavy sauce pan (do not crisp the bacon, just cook enough to extract the drippings). Remove from heat.
- Empty the 2 cans of cut green beans into the sauce pan directly on top of the cooked bacon and drippings.
- Add salt to taste and then the 1/4 teaspoons of minced garlic. Stir well and return to heat.
- Bring to a boil over medium heat, then reduce heat to med-low, cover, and simmer for at least 30 minutes (1 hour is better).
- Serve and enjoy.
- NOTE - Use good quality canned green beans. My family prefers "flat beans" (Cut Italian Green Beans), but regular cut will taste just as good.

- Mix the crushed garlic, 1 tbsp of the oil and 1 tsp smoked paprika together in a shallow dish and turn the pork steaks over in the mix to coat them on both sides. Heat a large non-stick frying pan and fry the pork for about 4 mins on each side to part-cook and brown them, then remove them from the pan.
- Add the rest of the oil to the pan and fry the onions, carrots and sliced garlic, stirring frequently for 10 mins until the veg starts to caramelise a little. Pour in the sherry vinegar, allowing it to sizzle in the heat, then add the peppers, bouillon, rosemary, any juices left in the dish from the pork, the cherry tomatoes, tomato purée, remaining 3 tsp paprika and beans.
- Lay the pork steaks on top, then cover the pan and cook for 20 mins until the pork and vegetables are tender. The pork will be cooked and juicy, but not fall apart. Remove the pork from the pan, stir in the parsley and a squeeze of lemon juice, if using.
- If you're following our Healthy Diet Plan, eat two portions of the pork and beans now and chill the rest for another day. Will keep for up to two days. To serve the second night, just reheat in a pan.

- In a large pot of salted water cook the green beans about 5-6 minutes, only until just tender but still with some "bite".
- In a saucepan, heat the olive oil on medium heat and fry the onion for 5 minutes, until softened. Add the garlic and cook another minute. DO NOT burn the garlic!
- Drain the green beans well and add to the saucepan with the garlic. Cook, stirring constantly for 2-3 minutes. Stir in the crumbled bacon. NOTE: If using Serrano or Parma ham, add it at the same time with the garlic.
- Season with salt and pepper. Serve warm.

- Cook green beans (you can steam the fresh ones about 15-18 minutes; or fix frozen according to pkg directions, or heat canned).
- Saute onion in bacon fat or butter/margarine until tender and starting to turn brown.
- Mix cornstarch, salt, mustard, brown sugar, and vinegar together with 1/2 cup of the water from the green beans.
- Add this to the onions in the pan and cook, stirring, until slightly thickened.
- Drain the cooked green beans and mix into the thickened onions; adjust salt and pepper and stir, coating green beans and cooking until reheated if necessary.
- Top with crumbled bacon and serve.

PINTO BEANS WITH MEXICAN-STYLE SEASONINGS
Pinto beans are simmered with onion, tomatoes, chili powder, cumin and garlic. I love making these beans just because they make the whole house smell so good, and the longer they simmer the better they taste. You could add 1/2 can of beer to make 'borracho' beans. I personally taste-test throughout the entire cooking process and add extra seasoning as I feel it needs it. These beans could simmer all day long; just make sure they have plenty of water to keep the beans covered.

- In a large Dutch oven, cook bacon over medium heat until crisp, about 5-7 minutes. Use a slotted spoon to remove the bacon to a paper towel-lined plate, leaving the drippings in the pot.
- Add the onion and cook, stirring, until softened, about 5-6 minutes. Add the green beans, chicken broth, sugar, soy sauce, black pepper, and half of the cooked bacon into the pot with the onion. Set the remaining half of the bacon aside to use as a garnish at the end.

- Start by preparing the green beans. You can use fresh beans, but I usually buy a bag of frozen ones. Here in Spain I go to La Sirena, and in the US I love the ones at Trader Joes. Heat a heavy pan over medium-high, and add 2 T of olive oil. Add the green beans and sauté for about seven minutes until just cooked through, but still crunchy. Season with salt and pepper and put into a large bowl.
- Now toast the slivered almonds. Place them in layer on a dry frying pan and sauté over medium heat. Make sure to keep a close eye on them because they'll burn in a second! Remove the pan once lightly browned and fragrant.
- Now make the dressing-- I know anchovies can be scary to some people, but just try this dish. It's incredible. The anchovies add a depth of flavor that's hard to achieve. Smash the anchovies and garlic in a mortar and pestle until you have a thick paste. Whisk in the mustard and sherry vinegar, and slowly drizzle in the olive oil until everything emulsifies and the consistency looks like a dressing.
- Now add the dressing to the cooked green beans, little by little until just coated. Warm if necessary, and then place into a serving dish and decorate with the toasted almonds. Enjoy!

- Rinse 1/2 lbs (250g) of fresh green beans under cold running water, shake off any of the excess water and cut off 1/2 inch from each end of each green bean, also thinly slice 5 cloves of garlic
- Heat a fry pan with a medium heat and add a 1/4 cup of cold water, once the water comes to a light boil add the green beans into the pan and place a lid on top
- Three minutes after adding the lid remove it, there should be almost no water left in the pan, drizzle in a generous tbsp of extra virgin olive oil and the thinly sliced garlics, mix everything together, continue to mix so the garlics can lightly cook, you don´t want to brown the garlics, just make them fragrant
- After 2 minutes turn off the heat, add in 1 tsp of sweet smoked paprika and season everything with sea salt & freshly cracked black pepper, mix together until well combined, very important to turn off the heat so the paprika does not get a bitter flavor
