Sunny's Ham and Cheese Biscuits with Honey Dijon Butter image

Steps:

  • For the biscuits: Preheat the oven to 400 degrees F.
  • Place the self-rising flour in a large bowl and toss with the cheese and ham. Grate the butter into the flour mixture. Pour in the buttermilk and mix gently with a wooden spoon. Once the dough comes together, turn it out onto a floured surface, divide it into 8 equal balls and pat them down lightly.
  • Put the balls in a cast-iron pan or on a baking sheet sprayed with cooking spray. Bake until brown, 20 to 25 minutes.
  • For the butter: In a bowl, mix together the butter, honey and mustard.
  • When the biscuits are done, brush some of the butter over the tops. Serve the biscuits with the remaining butter and the preserves.

2 cups self-rising flour
1/3 cup shredded Cheddar-jack cheese blend
3 slices thin deli ham, chopped
3 tablespoons salted butter, slightly frozen
1 cup buttermilk
All-purpose flour, for dusting
Nonstick cooking spray, for the baking sheet, optional
1 stick (8 tablespoons) salted butter, softened
2 tablespoons honey
1 tablespoon whole-grain Dijon mustard
Blackberry or raspberry preserves, for serving

Steps:

  • Preheat oven to 450°. In a food processor, process ham until ground; set aside. In a large bowl, combine the flour, baking powder, baking soda, onion powder, garlic powder and mustard. Cut in shortening until mixture is crumbly. Fold in ham and chives. Add buttermilk; stir just until the dough clings together. , Turn onto a lightly floured surface; knead gently 10-12 times. Roll dough to 1/2-in. thickness. Cut with a floured 2-1/2-in. biscuit cutter. Place in a large ungreased cast-iron or other ovenproof skillet. Bake until golden brown, 13-15 minutes. Brush with butter. Serve warm.

This is the recipe for her biscuits only it uses rolls, not biscuits. She made them the day before and just heated them when it was time for the party!!

Steps:

  • Saute onion in butter till tender.
  • Add mustard, Worcestershire sauce and poppy seeds.
  • Place in refrigerator until it reaches spreading consistency.
  • Open the rolls, spread both sides with the mixture.
  • Place small amount of ham and cheese on roll and replace the top of the roll.
  • Cover with foil and heat at 425 degrees for 20 minutes.

Steps:

  • Preheat oven to 350 degrees. In a large mixing bowl, combine 2 cups flour, baking soda, salt and baking powder. Mix well. Add the butter and buttermilk, and knead lightly by hand to make a cohesive dough.
  • Sprinkle a work surface with flour, and turn the dough onto it. Knead with the heel of the hand about six times; do not overhandle. Roll out into a flat circle about 3/4-inch thick. Use a Champagne flute or biscuit cutter to press into 12 circles about 2 to 2 1/2 inches in diameter. If desired, reroll the scraps of dough to make into biscuits.
  • Arrange the biscuits on a cookie sheet, and bake until lightly browned, 12 to 14 minutes. Remove from heat and cool slightly. To serve, split the biscuits in half and butter each cut side. Insert a slice of ham between the halves, and close. If desired, reheat in the oven for 2 to 3 minutes. Serve warm.

  • In a large bowl, combine the flour, salt, and sugar. Add 1/2 cup of the cold butter to the flour mixture and use a pastry blender to cut the butter into pieces about the size of peas. Stir in the cheese and ham and mix well to combine. Pour about 3/4 cup of buttermilk into the bowl and mix well. If the dough is still too crumbly, gradually add more milk to get it to the point there you can roll it out, but not too sticky. Turn the dough out onto a floured surface. Sprinkle some additional flour over the dough. Knead the dough lightly being sure to fold it over on itself three to four times. Gently roll or pat the dough to about 3/4-inch thick. Use a 2 1/2" to 3" biscuit cutter to cut the biscuits by pressing strain down to cut them. Take care to not twist the cutter. Use a straight up and down motion. Transfer the biscuits to the prepared pan. Rework the dough and continue to cut biscuits until all the dough has been used.
  • Melt the remaining 2 tablespoons of butter and brush the tops of each biscuit. Bake 14 to 16 minutes, or until golden brown. Serve warm.
