APPLE SPICE WAFFLES

Apple Spice Waffles image

Steps:

  • Preheat waffle maker. In a large bowl, combine biscuit mix, cinnamon and nutmeg. In another bowl, whisk eggs, milk and butter; stir into dry ingredients just until moistened; stir in apple., Bake waffles according to manufacturer's directions until golden brown. If desired, serve with whipped cream, syrup and additional chopped apples.

2 large eggs, room temperature
1-1/2 cups 2% milk
6 tablespoons butter, melted
1 cup chopped peeled apple

SPICED APPLE WAFFLES

This recipe came from a Williams-Sonoma kitchen catalog and looked so good that I just had to try it. My boys couldn't get enough of these!!! The extra waffles freeze well to use later as "toaster waffles" - a great and tasty time-saver for those busy mornings!

Spiced Apple Waffles image

Steps:

  • Preheat waffle iron. In large bowl, whisk together eggs, buttermilk, milk and butter. Stir in apple. In another bowl, whisk together flour, sugar, baking powder, pumpkin pie spice, baking soda and salt. Add flour mixture to egg mixture; whisk until smooth (some small lumps are OK).
  • Sprinkle 2 tablespoons pecans (if using) onto waffle maker. Pour about 2/3 Cup batter onto surface. Cook waffles until golden brown, about 5 minutes. Keep warm in 200 degrees Farenheit oven while cooking the remaining waffles. Serve with whipped cream or maple syrup and enjoy the wonderful smells permeating throughout your house!

When making waffles, consider making extras to freeze for another day. To serve later, unwrap them from their freezer bag, preheat oven or toaster to 375°, and warm the waffles for about 3 minutes.

Steps:

  • In a large mixing bowl, stir the flour, baking soda, salt, and spices together.
  • Pour in the melted butter and stir until it disappears.
  • Stir in the buttermilk, egg yolks, molasses, vanilla, and apple.
  • Beat the egg whites using an electric mixer until stiff but still glossy.
  • Heat a greased waffle iron; fold the egg whites into the batter.
  • Cook waffles one at a time, following the directions from the waffle-iron manufacturer.
  • They should be crisp and brown when done.
  • Serve the waffles individually as they are ready or hold them briefly in a warm oven until all are finished.
  • Serve with softened butter and warmed maple syrup.
