HOT SPICED SANGRIA

- Combine 2 bottles each red wine and white wine, 1 cup brandy, 1 sliced orange, 2 cups each frozen cherries and frozen peaches, 2 cinnamon sticks and 1 cup simple syrup in a large slow cooker. (To make simple syrup, simmer 1 cup each sugar and water, stirring until dissolved.) Cover and cook on high for 1 hour, then keep warm on low until ready to serve. Ladle into glasses.
- If you don't have a slow cooker, keep these drinks warm in a saucepan on the stovetop over low heat.
HOT SPICED SANGRIA
Steps:
- Combine all ingredients in a slow cooker. Put setting on HIGH for 1 hour. Reduce to warm to hold temperature. Ladle into glasses from slow cooker. Be sure to include some fruit in the glasses. Garnish with orange peel.
- Combine the sugar, water and zest in a saucepan. Bring to a boil, reduce to a simmer. Stirring occasionally, simmer for 5 minutes or until sugar is dissolved.
SPICED WHITE SANGRIA

- Combine first 7 ingredients in a large pitcher. Refrigerate, covered, stirring occasionally, about 4 hours. Discard cinnamon sticks. Refrigerate, covered, 2 hours longer. Just before serving, stir in chilled club soda. Serve over ice with fruit slices in each glass.

SPICED RED SANGRIA

- In a heavy medium saucepan, combine water, sugar, cloves, cinnamon, star anise, vanilla pod and ginger. Bring to a boil, reduce to a simmer and cook 10 minutes. Turn off heat and let sit 30 minutes to infuse. Strain into large bowl. Add wine and fruit juices and stir well. Serve in pitchers over lots of ice.

CLASSIC SPANISH SANGRIA
This is an authentic version of the popular wine drink. You can add any fruit that you want, but I find that apples and pears absorb all the rum. This one is not diluted with carbonated beverages. I have much success with red Burgundy wine and white rum, though spiced rum is nice too.

- Have the fruit, rum, wine, and orange juice well chilled. Slice the lemon, lime and orange into thin rounds and place in a large glass pitcher. Pour in the rum and sugar. Chill in refrigerator for 2 hours to develop the flavors.
- When ready to serve, crush the fruit lightly with a wooden spoon and stir in the wine and orange juice. Adjust sweetness to taste.

- In a small saucepan, combine the water, sugar, star anise, peppercorns, cloves, cinnamon sticks and ginger. Bring to a simmer over moderately high heat, stirring to dissolve the sugar. Boil until reduced by one third and slightly syrupy, about 15 minutes. Let the spice syrup cool, then strain into a glass jar.
- Pour the red wine into a 3-quart pitcher. Stir in the orange juice, rum, brandy, Cointreau, club soda and 1/4 cup of the spice syrup; add more syrup if you prefer a sweeter sangria. Add the diced oranges, lime, apple and pear and refrigerate overnight. Serve the sangria in tall glasses over ice. Garnish with a tablespoon of the diced fruit.
