SIRLOIN STRIPS OVER RICE

I found this recipe in a movie magazine some 20 years ago. It was the favorite of some male star, but I don't remember which one. Its great flavor and the fact that leftovers just get better have made it a family favorite! -Karen Dunn, Kansas City, Missouri

Steps:

  • Bring the rice to the boil in 2 litres of water and allow to cook for 7 mins. Rinse the rice in a colander with cold water. Leave to drain for 5 mins.
  • Meanwhile, put half the butter and the oil into a saucepan. Bring to a medium heat and add the rest of the ingredients, except the rice and the saffron. Slowly fry until fragrant, then stir in the drained rice. Using the end of a wooden spoon to make holes in the rice to allow the steam to rise. Dot the remaining butter on top of the rice and scatter over the saffron. Put the lid back on the pan, and cover with a tea towel to seal the steaming process. Turn off the heat and leave to steam for 30 mins - this makes the rice fluffy and separated without drying it out.

  • Heat the oil over high heat until it is almost smoking. It needs to be quite hot. Add the mustard seeds. They should be begin to pop immediately. When they do, throw in the cumin and coriander seeds followed immediately with the chopped onion. The onion will help cool your pan down. Reduce the heat and sauté the onion for about five minutes until soft and translucent.
  • Now add the chopped garlic, salt and chilli powder. You may need to season with a little more salt to taste later but this salt is used to help release some of the moisture from the onion into the marinade.
  • Let the garlic sizzle for about 40 seconds and then remove the pan from the heat. Allow this mixture to cool and then blend into a smooth paste. Add the lime juice and pour it all over the steaks.
