AROMATIC SPICED HAM

Aromatic Spiced Ham image

Steps:

  • Place the gammon in a large saucepan. Add all the ingredients for the ham to the pan, adding more water if the ham isn't covered. Bring to the boil, before reducing the heat to a simmer and partially covering the pan. Cook for about 2 1/2 to 3 hours, approximately 1 hour a kilo simmering time, plus an extra 15 minutes.
  • When you are ready to glaze the ham, preheat oven to 440 degrees F (230 degrees C).
  • Remove the ham from the liquid and sit the ham on a board. Strip off the rind, and a little of the fat layer if it's very thick, and cut a diamond pattern into the remaining fat with a sharp knife in lines of about 3/4-inch apart. Stud each diamond with a clove. Put the jelly, cinnamon, paprika and red wine vinegar into a saucepan and whisk together over a high heat bringing it to the boil. Let the pan bubble away so that the glaze reduces to a syrup-like consistency.
  • Place a layer of foil over a roasting tray big enough to hold the ham. Place the ham on top of the foil. Pour the glaze over the clove-studded ham and then transfer it to the oven. Cook for about 15 minutes, or until the glazed fat is burnished. Allow the meat to rest in a warm place for at least 15 minutes before carving it.

1 (4-pounds 15-ounce to 6-pounds 1-ounce) boneless mild-cure gammon
8 3/4 fluid ounces (250ml) red wine
5 pints 5 1/2 fluid ounces (3 liters) water (approximately)
1 large onion, halved
2 garlic cloves, unpeeled
1 head fennel, halved
2 star anise
1 tablespoon coriander seed
1 tablespoon fennel seed
1 tablespoon mixed peppercorns
Approximately 16 whole cloves
4 tablespoons red currant jelly
1/2 teaspoon ground cinnamon
1 teaspoon smoked paprika
1/2 teaspoon red wine vinegar

TANGERINE GLAZED HAM WITH FRESH SAGE

This recipe comes from Tyler Florence and makes the most magnificent and delicious ham we have ever tasted! It is beautiful when it comes out of the oven and the aroma while its cooking is just heavenly. I am posting the recipe as Tyler has written it, however, when I prepare this I make a few changes to lower the sugar and fat content in the glaze which are as follows: I reduced the butter to 1/2 cup unsalted butter and 1/2 cup smart balance spread; I reduced the brown sugar to 1 cup and added 1 cup of splenda mixed with a few tablespoons of sugar free maple syrup. I reduced the water content to 1/2 cup and only had to simmer for an additional 15 minutes to get the syrup texture. The substitutions work well, but I am sure this original recipe below will blow you away!

Tangerine Glazed Ham With Fresh Sage image

Steps:

  • Preheat the oven to 300 degrees F.
  • Put the ham in a large roasting pan, fat-side up.
  • Using a sharp knife, score the ham with cuts across the skin, about 2-inches apart and 1/2-inch deep.
  • Cut diagonally down the slashes to form a diamond pattern; season the meat generously with salt and pepper.
  • Chop about 8 of the sage leaves and put it in a bowl; mix with the oil to make a paste.
  • Rub the sage-oil all over the ham, being sure to get the flavor into all the slits.
  • Bake the ham for 2 hours.
  • Assemble the glaze as the ham is baking.
  • For the glaze: Place a saucepan over medium heat.
  • Add the chunks of butter, tangerines, tangerine juice, brown sugar, water, and spices.
  • Slowly cook the liquid down to a syrupy glaze; this should take about 30 to 40 minutes.
  • After the ham has being going for a couple of hours, pour the tangerine glaze all over it, with the pieces of fruit and all.
  • Scatter the remaining sage leaves on top and stick the ham back in the oven and continue to cook for another 2 hours, basting with the pan juices every 30 minutes.
  • The ham is done when it is dark and crispy, and the whole thing is glistening with a sugary glaze.
  • Set the ham on a cutting board to rest for 10- 15 minutes before carving.
  • Serve the tangerine glaze on the side if desired.

  • Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep. Combine the mustard, brown sugar, ginger and cinnamon; rub over surface of ham. Spiced ginger-glazed ham image

  • Put the gammon in a large pan and cover with 2 litres of ginger ale. Top up with water to cover the joint, if you need to. Add the whole allspice berries and bring to a boil. Turn the heat down to low, and simmer gently, covered, for 2½ hrs. Top up with water, if you need to, while it's simmering.
  • Drain the ham and leave until it's cool enough to handle while you make the glaze. Put the remaining ginger ale in a pan with the sugar, grated ginger and crushed allspice. Simmer, uncovered, for 20-25 mins until syrupy.
  • Heat the oven to 190C/170C fan/gas 5. Remove the skin from the ham, leaving a layer of fat, then score the fat in a criss-cross pattern. Transfer the ham to a foil-lined roasting tin, and brush over half the glaze. Roast for 15 mins, then glaze with the remaining syrup. Increase the temperature to 200C/180C fan/gas 6 and roast for a further 15-20 mins until you get a sticky golden crust. Leave to cool for 15 mins before carving. Drizzle over more glaze from the tin to serve, if you like. Can be made ahead and chilled for up to four days.

Steps:

  • Put the gammon, onion, tangerine zest and star anise in a large pan. Pour over all but 100ml of the ginger beer and, if necessary, top up with water so the gammon is just covered. Bring to the boil, skim the surface to remove any fat, reduce to a simmer, then cover and cook for 3-3½ hrs or until the meat is tender. When the gammon is cooked, remove it from the pan. Reserve the cooking liquor and use to cook lentils (see 'Goes well with'). Cool, cover and chill at this stage if you want to prepare ahead - bring back to room temp before continuing.
  • Heat oven to 220C/200C fan/gas 7. Carefully cut the skin off the gammon, making sure to leave a layer of fat, then lightly score the fat into diamond shapes. Place in a roasting tin lined with foil. Warm the honey, mustard and reserved 100ml ginger beer in a pan and boil until it thickens. Spoon over the fat, then stud a clove into the middle of each diamond. Bake for 20-25 mins or until the glaze has caramelised. If you did prepare ahead, add another 10 mins to the cooking time. Slice and eat warm or cold.
