SUGAR AND SPICE MUFFINS

A great recipe compliments of my grandma. The muffins taste like cake doughnuts....yummm!

Sugar and Spice Muffins image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 muffin cups.
  • In a large bowl, combine flour, baking powder, salt and nutmeg. In a separate bowl, beat together oil, 3/4 cup sugar, egg and milk. Stir egg mixture into flour mixture, just until moistened. Spoon batter into prepared muffin cups.
  • Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into a muffin comes out clean.
  • While muffins are baking, mix together 3/4 cup white sugar and 1 teaspoon cinnamon. While muffins are still hot, dip tops in melted butter and then in cinnamon sugar mixture.

I wanted to make corn muffins, but also wanted something a little different, I came up with this. It's not spicy, but just spiced with some of my favorite spices.

Spiced Corn Muffins image

Steps:

  • Heat oven to 425°F Coat muffin pan with non stick spray.
  • Mix together the dry ingredients in a large bowl.
  • Mix together the wet ingredients, not including the cheese, in a small bowl.
  • Add the wet to the dry and mix until almost no dry spots remain. Add the cheese at this point and mix until everything has been moistened.
  • Fill 12 muffing cups 1/2 full and bake for about 15 minutes or until a toothpick inserted in the center of a muffin comes out clean.

1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1/8 cup sugar
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon cumin
1 teaspoon turmeric
1 teaspoon coriander
1 1/4 cups milk
2 eggs
2 tablespoons olive oil
1/2 cup cheddar cheese, shredded and gently packed

Sugar and Cinnamon Spice Muffins image

Steps:

  • Combine dry ingredients. Stir in milk, egg, and butter, beating only enough to blend. Stir in raisins and nuts, of desired.
  • Fill greased muffin cups 3/4 full. Bake at 400º for 20 minutes or until muffins test done.

1 teaspoon nutmeg
1 cup buttermilk
1 egg, lightly beaten
1/2 cup butter, melted
1/2 cup raisins (optional)
1/2 cup pecans, chopped (optional)

SPICED-UP MUFFINS

Adjusted from Williams Sonoma collection recipe...a very nice spiced muffin. If you love cinnamon, clove, nutmeg and allspice you will love these muffins. I love them with a fresh brewed cup of coffee or tea.

Spiced-Up Muffins image

Steps:

  • Preheat oven to 400F (200C) and prepare muffin tins by greasing or lining them with paper.
  • In a large bowl, stir together the flour, sugar, baking powder, salt, nutmeg, cinnamon, cloves and allspice - then set aside.
  • In a medium bowl, whisk together the egg, cream, milk, melted butter (and currants if you are using them).
  • Add the wet ingredients to the dry ingredients and stir JUST UNTIL BLENDED (do not overmix).
  • Spoon into the muffin tins, filling 2/3rds full.
  • Bake for about 20 minutes or until pick comes out clean.
  • Cool in tins for 5 minutes before removing to wire rack to cool completely.
