HEALTHY OATMEAL RAISIN SPICE COOKIES (1 WW POINT)
This is a recipe I've used for a while, and when I started WW, I tweaked it a bit to get it a little healthier!

Steps:
- Mix all dry ingredients.
- Add in applesauce, egg and vanilla.
- Mix until completely blended. You may need to finish mixing with your hands.
- Shape into balls the size of walnuts. Place on a greased cookie sheet 2 inches apart.
- Bake at 350 degrees F (175 degrees C) for 11-13 minutes until edges are lightly browned.
- Cool 5 minutes on baking sheet, then remove cookies to baking rack to finish cooing.

GRANDMA M'S SOFT RAISIN SPICE COOKIES
I have craved these for weeks and it took me that long to find them in her collection. Grandma has been gone for two years and I miss her baking so much. I couldn't find the recipe because she called them Delicious Drop Cakes but they are cookies.

Steps:
- Cream butter and sugar.
- Add well beaten egg.
- Sift flour and spices.
- Add raisins and nuts.
- Mix together nuts and raisins in flour.
- Slowly add flour, spice, nuts and raisins to egg, butter and sugar.
- Add quickly baking soda dissolved in hot water.
- Mix well until all liquid comes together.
- Drop from spoon on greased pan.
- Bake 10 minutes at 350. Watch, till slightly browning on the bottom edge.
- These might take a tad longer in your oven, mine cooks high. This is just a guesstimate because Grandma just had Bake as the next instruction so time and heat was a guess for me. They are nice and soft and I have double the recipe without any problems.

- Preheat oven to 350 degrees F. Line 2 cookie sheets with parchment paper.
- Whisk together dry ingredients (flour - salt) in medium bowl.
- Mix together with an electric mixer on low the next 5 ingredients (sugar - egg) until blended. Add flour mixture and beat until combined. Stir in raisins. Let batter stand for 10 minutes.
- Drop batter by teaspoonfuls onto baking sheets, 2 1/2 inches apart to make 30 cookies.
- Bake for 10 minutes and let cool on cookie sheets for 1 minute before transferring to cooling racks.
- Stir together icing ingredients (confectioners sugar and milk) in a small bowl and then frost cookies with glaze. Let stand until glaze is set (10 minutes).

With a little experimenting, I came up with these chewy, spicy, oatmeal raisin cookies. They make your kitchen smell wonderful while they are baking. They almost remind me of Christmas because the spices smell so good.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together the butter, butter flavored shortening, brown sugar, white sugar, eggs, and vanilla until smooth. Combine the flour, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture. Stir in the oats and raisins. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
- Bake 10 to 12 minutes until light and golden. Do not overbake. Let them cool for 2 minutes before removing from cookie sheets to cool completely. Store in airtight container. Make sure you get some, because they don't last long!

- Combine water and raisins in a small saucepan; bring to a boil. Cook for 3 minutes; remove from the heat and let cool (do not drain). , Preheat oven to 350°. In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, baking powder, baking soda, salt and spices; gradually add to creamed mixture and mix well. Stir in nuts and raisins. , Drop by teaspoonfuls 2 in. apart onto greased baking sheets. - Mix together flour, cinnamon, ground nutmeg, baking soda and salt. Set aside.
- Layer ingredients in order given in a 1 quart canning jar. Try and find one with a wide mouth as it will much easier to pack. Getting all the ingredients to fit will require some pressing and tapping. Please be sure to firmly pack down each layer in place before adding the flour mixture.
- Instructions to attach to jar:.
- Oatmeal Raisin Spice Cookies.
- Empty jar of cookie mix into large mixing.
- bowl. Use your hands to thoroughly blend the.
- mix.
- Add 3/4 cup butter softened to room temperature. (To make a lower fat cookie, you can replace up to two thirds of the buttrer with unsweetened applesauce.) Stir in one egg, slightly beaten. Add in 1 teaspoon of vanilla.
- Mix the dough completely blended. You may need to finish mixing with your hands.
- 4. Shape into balls the size of walnuts. Place on a parchment-lined cookie sheet 2 inches apart.
- Bake at 350 degrees F for 11 to 13 minutes until edges are lightly browned. Cool 5 minutes on baking sheet. Remove cookies to baking racks to finish cooling.
- Makes 3 dozen cookies.

My Great Aunt gave this recipe to my grandma many many years ago. I made it all the time as a kid, and still remains one of my favorite bar recipes.

- 1. Boil 1 cup raisins and 2 cups water for 3 minutes. Drain juice and save.
- 2. Cream 1/2 cup butter with 1 cup sugar. Add 2 cups flour and 1/4 tsp. salt and mix well.
- 3. In a separate bowl, mix beaten egg, cloves, allspice, cinnamon, and baking soda. Add to the flour mixture along with 1 cup of the raisin juice and mix well. Stir in raisins after that is mixed.
- 4. Spread dough to corners of greased 9x13 cake pan or a greased cookie sheet. Bake at 350 degrees for 25 minutes or until done.
- 5. Frost while hot with a powdered sugar frosting or cream cheese frosting. Enjoy!

Steps:
- In a small saucepan, over medium heat, combine the 1/3 cup of sugar, water, raisins, butter and pinch of salt. Bring ingredients to a boil, and cook until thick, you should be able to see the bottom of the pan while stirring when finished. Remove from heat and set aside to cool.
- Preheat oven to 375 degrees F (190 degrees C).
- Sift together the flour, cinnamon, allspice, cloves, salt and baking powder, set aside. In a medium bowl, cream shortening and sugar until smooth. Stir in the eggs and vanilla. Add dry ingredients, mix until blended, then finally stir in the milk.

Cover with the other half of the cookies. Press the edges together with the tines of a fork. Sprinkle with sugar and bake on unprepared cookie sheets for 10 to 12 minutes in the preheated oven.

SUGAR FREE OATMEAL RAISIN SPICE COOKIES MIX IN A JAR
My personal version of a recipe I found on www.budget101.com. I wanted to do more than just have a good sugar free cookie since the starchy carbs in the flour will also jack blood sugar. This version comes out fantastic! They are more cake like than a standard crisp cookie and stay wonderfully moist in a cookie jar. Not that they will actually last long enough to worry.

- Carefully measure each ingredient into layers in a 1 quart jar. Re-used glass ice tea jars work great as well. Judicious us of a slim rolled paper cone does wonders to keep the layers clean. If mix is to be shipped ingredients may be measured into a clear plastic disposable pastry bag or decorative food safe cello bag to reduce shipping weight and then carefully tied closed.
- Be sure to attach instruction card or label with the following directions: Combine above listed ingredients (from the list of "additionally to make cookies from mix") with 1 package of "Sugar Free Oatmeal Cookie Mix". Drop by cookie scoopfuls 1" - 2" apart onto parchment lined baking sheets. Bake 10 - 15 minutes at 350oF. Cookies do not spread much so will still be rather round and cake like. Allow to cool 5 minutes on baking sheets before carefully removing to cooling racks to completely cool. Store in a cool dry place.
