A simple and very quick side dish that goes well with almost anything. I especially like it chicken fixed anyway.

- Cook pasta according to package directions.
- While pasta is cooking, heat the oil in a saute pan over medium heat. Add the garlic and shallot and saute for 2 minutes. Add the chicken, wine, and tomatoes. Simmer for 5 minutes.
- Add the drained cooked pasta, spinach, ricotta, and cream. Season with salt and pepper and garnish with Parmesan.

This is a nice light pasta - the sauce isn't heavy (or, really, very saucy at all) and the ricotta makes it just a touch creamy. It's also quite healthy. This is one of those recipes that can be made quickly with what you have in the kitchen! - Bring a large pot of water to a boil.
- Add salt, and then add the farfalle.
- Cook until al dente.
- Meanwhile, heat a large, heavy-bottomed pan over medium heat and add the oil.
- Sprinkle the chicken with salt and pepper and, once the oil is hot, add the chicken to the pan; brown on all sides, and then add the onions and cook for a minute or two.
- Stir in the mushrooms, garlic, and some salt and pepper.
- Sauté until all vegetables are tender.
- Increase the heat to medium high and add the vermouth.
- Cook until almost all the liquid has evaporated, and then stir in the diced tomatoes (and a few tablespoons of juice), red pepper flakes, parsley, oregano, basil, and salt & pepper to taste.
- Bring to a simmer and then reduce heat to medium-low, simmering until the flavors have developed (and chicken has cooked through).
- Add the spinach and cook until wilted down, about 2-3 minutes.
- Season to taste.
- Add the pasta to the sauce and stir to coat.
- Off the heat, stir in the ricotta cheese.

- Place 4 quarts of water in a large pot, season with salt and bring to a boil.
- Wash the zucchini and trim the ends, then grate them on the largest side of a box grater and set aside.
- In a large saucepan, heat the oil and butter and sauté the shallot and celery over medium heat, stirring, until the vegetables soften and begin to turn translucent. Add the minced garlic and continue cooking for another minute. Add the zucchini to the pan and sauté until the zucchini begins to soften and wilt.
- In the meantime, add the pasta to the boiling water and stir occasionally as the pasta cooks.
- Season the vegetables with salt and pepper. When the pasta is almost al dente, add the lemon juice, 1/4 of a cup of the pasta cooking water and the cheese to the pan, stirring to melt the cheese. Stir in the parsley and basil and let the mixture simmer gently for a moment or two.
- Drain the pasta, reserving some of the cooking water in case it is needed; add the pasta to the pan with the sauce and toss to coat it completely. Let the pasta cook in the pan for a minute, adding a splash of the reserved cooking water if the sauce seems too tight. Transfer to a warm bowl and serve immediately.

- Over medium heat, brown sausage, breaking up with back of spoon as you cook. Drain and set aside.
- To same pan add olive oil and garlic, saute until light golden.
- Bring large pot of water to the boil, add salt and pasta and cook for 8-10 minutes or until al dente. 3 minutes before the end of the cooking time, add broccoli; drain pasta and broccoli.

I was searching for a copycat recipe for the Cheesecake Factory's similar dish and found this. It looks promising so I'm posting it here to get some opinions and to save it for myself.

- Boil pasta according to instructions on box drain and set aside. save 1/2 cup pasta water and discard rest.
- Add oil to heated pan. Add Pancetta to the oil and let it render and get crispy a little for a couple of minutes on medium heat. Take pancetta out (leave oil in the pan) of pan and set aside.
- Add onions to the skillet and caramelize them over low to medium heat.
- Add mushrooms to caramelized onions and increase the flame to medium high. Sauté the mix for about 30 seconds.
- Add red peppers and tomatoes to the mix and flip the mixture for about 20-30 seconds seconds until mixed well.
- Add milk to the mix and bring it to simmer. Lower the heat and add roasted garlic paste to the mix and incorporate well.
- Add cream cheese and parmesan to the mix and mix well -- let it simmer until cream cheese, garlic, and parmesan is mixed well into milk forming smooth sauce.
- Add sage, salt and pepper (to taste) to the sauce and mix well. Add peas and pasta to mix and cook in the pan for a minute or so until pasta is well coated.
- Add pancetta to the pasta and serve. (Use pasta water to thin the sauce if it gets too thick).

Oh, my goodness!!! Today, I found a recipe that I thought I had lost forever. Years ago I ate Spinaci in a little restaurant (I don't remember the name of the restaurant or even know if it still exists), and was so thrilled with this richly Italian dish, that I asked the owner for the recipe. Somehow, somewhere, along the way, I lost the recipe. Now that I have it again (and, sharing it with my Recipezaar family), I can overwhelm my dinner guests. However, you will be amazed at how easy this indulgent dish is to make. I hope you enjoy as much as I do....Mangia!!!!:)

- Heat the olive oil to medium-low in a very large saute' pan. Stir in the pureed garlic and prosciutto only long enough to infuse the flavor; do NOT cook. Stir in the basil, oregano, and pepper only to infuse. Remove from heat, cover, and keep warm to let flavors mingle.
