SPICY CARROTS
While the entree cooks, fix a speedy stovetop side dish of Spicy Carrots. "After my sister brought the carrots to a family gathering, my husband begged me to asked for the recipe," recalls Dawn Flanigan of Westville, Ohio. Folks who like horseradish will enjoy the tangy-sweet combination. "It tastes too good to be so quick and easy," Dawn Assures. "I use baby carrots to save time, but regular carrots can be sliced into sticks instead," she adds.

- Place carrots in a saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain and keep warm. , In the same pan, melt butter; stir in the sugar, horseradish and parsley. Add the carrots, salt and pepper; stir gently to coat.

SPICY BROWN SUGAR BACON
Inspired by the millionaire's bacon at the restaurant Sweet Maple, these sweet, spicy, caramelized strips are perfect for a special breakfast or brunch gathering.

Steps:
- Preheat the oven to 300 degrees F.
- Cut bacon lengthwise into nine 1/4- to 1/2-inch-thick slices.
- Line a baking sheet with foil and place a cooling rack into the baking sheet. Coat the cooling rack with cooking spray.
- Whisk together the sugar, cayenne, paprika, 2 teaspoons pepper and 1/2 teaspoon salt in a pie dish. Pour 1/2 cup of the maple syrup into a small bowl.
- Brush both sides of each slice of bacon with maple syrup. Press the bacon, one slice at a time, into the brown sugar mixture to coat. Arrange on the greased wire rack. Sprinkle the bacon with the leftover brown sugar mixture.
- Bake, rotating halfway through, until the bacon is cooked and the sugar is dark and caramelized, about 1 hour 30 minutes.
- Transfer the bacon to a parchment-lined baking sheet. Let cool completely. (Bacon can be stored in an airtight container at room temperature for up to 3 days.)
- Meanwhile, whisk together the red pepper flakes and remaining 1/4 cup maple syrup in a small bowl. Drizzle the bacon with the red pepper-maple syrup or serve on the side for dipping.
BROWN SUGARED CARROTS
I love using carrots with tops, if available. I like to chop some of the tops and sprinkle them over the carrots like parsley. I also have been known to fry the tops and put them over these carrots for garnish and texture. This is my ultimate comfort food. Whenever I was home sick from school, I would make my mother drag out her arsenal of recipes to make me "better" and this is one of them...

- In a skillet large enough to hold the carrots, heat the olive oil over medium heat. When the oil begins to smoke lightly, add the carrots and season with salt and black pepper. Using a wooden spoon, stir the carrots to coat with the oil and seasonings.
- After the carrots have cooked for a few minutes, add the brown sugar and molasses and continue to cook, stirring from time to time. Add a little water so they can become tender without burning the sugar. Continue to cook until tender, about 5 to 8 minutes. Add more water, if needed, but the sauce should be thick enough to coat the carrots and should bubble around the edges of the pan. The carrots should be tender and fairly yielding when pierced with the tip of a knife. Add the butter and the rosemary sprig. Once the butter has melted remove the rosemary sprig and discard. Transfer the carrots to a serving bowl and garnish with chopped carrot tops. Serve immediately or allow to "rest" a little before serving.

- Whisk vinegar, water, and sea salt together in a small saucepan. Bring to a low boil over medium-high heat, reduce heat, and simmer until salt is completely dissolved, about 3 minutes. Set aside.
